Bulk Pie Crust Recipe

I am pie crust challenged. Really. They never come out quite the way I had hoped.
With fruit season *hopefully* approaching (please, strawberries, please), the urge to make an occasional pie will be upon me. Also Quiche is a lovely spring/summer meal-you can make it ahead (think baking the night before when the house is cool!) and eat it cold or warmed up in the microwave, you can add in all the little bits from the fridge that you need to use up! I also have a very yummy recipe for tomato pie that I love in late summer when those delicious REAL tomatoes are easy to find. And I can always do the good old Chicken Pot Pie thing!
So when I saw a mention at Coffee and a Muffin I was intrigued. I followed the link over and found some really nice directions for how to make ahead 20 pie crusts for the freezer.
Think of the benefits of having these crusts in the freezer, ready to use in 30 minutes. Friends coming over for dinner? Potluck at Work/School/Church? Bake sale or Pie Sale to donate too? You are ready in no time! You can even take a page out of my nanny’s book from growing up-make “Pie Squares” (Yum-you basically make a “pie” in an 8X11 pan but with only a thin smear of filling in between the crusts. When cooked you cut into bars. We did it with fresh raspberries from our patch. . . . )
I will be doing this soon! (and I promise to post my travails and successes with it for all to enjoy)
