Menu Plan 12-15

Last week was one of those weeks where things got swapped around and rewritten a lot on the Menu Plan front.

Monday went according to plan with breakfast for dinner, but then on Tuesday I realized I had forgotten to soak the beans for chili, so I compensated by skipping to Thursdays dinner of Gnocchi.

Wednesday it was important to me to get the Latkes done because of our family tradition to have them when we decorated the tree, but that very celebration took so much energy that AGAIN I forgot to soak the beans. . . so no chili on Thursday. . . I was supposed to have a friend over for lunch that day, but with school being closed early due to ice that plan got nixed. I was making us ham potato soup, so I just added more to the pot and served it to the family for dinner.

Then on Friday I realized we’d be having takeout pizza on Sunday when we decorated our gingerbread houses, so I opted in grilled cheese sandwiches. . .

Yeah. Chaos.

This week should be *snort* better.

Monday: Leftover Pizza

Heck, we paid good money for it last night, and it’s just the kiddos and I at home. So we’ll eat the pizza and call it good.
Tuesday: Chili & Cornbread

I’m going to put those beans into the pot to soak as soon as I get off the computer. Really. I promise.

Wednesday: Vension Stirfry with Rice

I’ve got a lot of veggies in the crisper drawer that are starting to look not so crisp anymore. Stirfry is a perfect way to use them up. Also one package of Venison can be stretched over two meals when you cut it up into slices for a meal like this. I’ll make extra rice to be used in a quiche on Saturday.

Thursday: Venison Stroganoff, Noodles & Green Beans

The rest of the venison in a mock stroganoff (cream of soup, brown gravy mix, stir in sour cream at the end-we’ve got sour cream left from the potato pancake extravaganza)

Friday: Pizza

nach.

Saturday: Quiche and salad or soup (whichever I feel like)

I’ve kind of fallen off the one meatless meal a week bandwagon-I am trying to get back on it. I like to make a rice crust quiche, mostly because pie crust scares me. (oh, and it has a lot more calories).

Sunday: Roast Chicken, Gravy, Biscuits & Sauteed Cabbage

Haven’t done a whole chicken in a while, and it will make nice leftovers and soup for the next week.

    What’s a good side to go with gnocchi?

    Well, for a “good” side dish I would go italian rest style and just do a simple salad. However at my house i pair with whatever type of vegetable I feel like-because the kiddos need a veg!
