It’s back to school this week for the Frugal Upstate kiddos–spring break is over and it’s back to the regular grind.
These are the considerations for this week:
1. The regular round of dance lessons, scouts, piano lessons, pool league and all that jazz is happening this week. I’m going to be in town all day both Tuesday and Wednesday–so I’ll be tired and short on time by supper, especially on Wednesday when we’ve also got evening activities. Friday night we’ve got a school movie to attend, Saturday I’ve got class all day, and Sunday besides church we’ve got dance photos And somewhere in there I’ve got to paint the church nursery as well. It’s a busy week.
Oh, and I turn 42 on Wednesday as well
2. I never did make the pork chops last week. I dug carrots from the garden (and there are only about another foot of them out there). I’m doing pretty well otherwise on the leftovers/gotta use it up front.
3. The weather is supposed to be warmer this week–but rainy through the end of the week with nicer weather on the weekend. I’m thinking that by Saturday or Sunday it might be nice to cook something on the grill. We get crazy around here when it gets above 50
Taking all that into account here is my game plan:
Monday: BBQ Baked Pork Chops, Rice and Mixed Veggies
I just pan fried the pork chops for some color, slathered them with a bottle of BBQ sauce and stuck the whole cast iron pan in the oven to finish cooking. Simple rice and veggie for sides.
This is my pork meal for the week.
Tuesday: Salsa Chicken Burritos, Citrus Rice and Salad
I have some crockpot Salsa Chicken frozen from the last time I made a batch. I’ll just defrost it, wrap it in some tortillas (if I had more time I’d make Homemade Tortillas) pour some enchilad sauce and cheese on top, and bake. I’ll make the citrus rice as a side along with a quick green salad.
Wednesday: Chicken Soup and Biscuits
I’ll start chicken soup in the crockpot in the morning and then just toss together some biscuits right before supper. Quick and easy for the busiest day I have all week.
This is my soup meal for the week.
Thursday: Venison Parmesan over Spaghetti with Green Beans
I’ll make the Venison Parmesan from a couple of the venison steaks in the freezer and serve it over some pasta. I’ll just warm up some home canned green beans (or maybe marinade them salad style if I think of it) for my vegetable.
This is my venison meal for the week.
It’s movie night at the school–I’m betting I’ll wind up having a gaggle of kiddos over after school and then we’ll head to the free movie. . . and when I’ve got a bunch of kiddos to feed pizza is my go to meal. You rarely have a kid say “I don’t eat pizza”. I’ll use the Pizza Hut Crust Clone recipe of course.
This is my meatless meal for the week (since it’s cheese pizza)
Saturday: Fish Sticks, Tater Tots and Carrots
Yeah-it’s junky, but the kids will love it and I can just toss it in the oven when I get home from class.

Sunday: Burgers on the Grill
