I don’t always follow each week’s menu plan-life is full of changes and, as they say, the best laid plans of mice and men often go awry. Last week’s Saturday and Sunday meals were completely tossed and I threw together some super simple quick meals instead. No worries though-that’s the beauty of a meal plan-it’s your plan so you can change it however you like!
1. We’ve got scouts on Wednesday and “Turn off TV Week” activities two evenings. Yankee Bill is out for pool on one evening. . . so there are a bunch of nights I most likely won’t want to do much in the way of cooking.
2. I’ve got a bunch of leftovers in the fridge from last week-and we bought a dozen cabbage rolls from the American Legion fundraiser on Sunday afternoon.
3. My goal every week is to include one venison, one fish, one meatless one bean and one soup meal.
Taking all that into account here is my game plan:
Monday: Cabbage Rolls, Macaroni & Cheese and Green Beans
We’ll have the cabbage rolls we bought from the Legion (a nice change from my typical Cabbage Roll Casserole-I’m too lazy to make real rolls!) and add some homemade stove top Mac ‘n Cheese and some home canned green beans. This is filling and since we purchased the main course it will be very quick.
Tuesday: Salmon Loaf with Citrus Rice and Carrots
Since I never did make the Salmon Loaf last week I’ll go ahead and put it on this weeks plan–I’m even going to use just salmon instead of doing a less expensive tuna and salmon mix (which is just as tasty!). Since citrus always seems to go so well with fish I’ll continue with last weeks plan and use citrus rice as a side and then just put some sauteed or steamed carrots from the garden for the vegetable.
This is my fish meal for the week.
Wednesday: Spaghetti Carbonara with Salad
We sometimes joke and call this “scrambled eggs and bacon spaghetti”-but really Spaghetti Carbonara is a sort of egg cream sauce and bacon. The spaghetti is rather rich, so nice green salad will be a good counterpoint.
This is my meatless meal for the week.
Thursday: Pintos with Kick, Stewed Greens and Homemade Biscuits.
The last time I made these Pintos with Kick I ate half of the pot myself. Mmm. I think they are delicious! Southern food like pintos just seems to call for greens. Maybe if the weather clears up I’ll be industrious and head out to the lawn to look for dandelions. If not, I’ve got plenty of greens still in the freezer from last year. Biscuits on the side finish up the meal.
This is my bean meal for the week.
Using my favorite Pizza Hut Crust Clone recipe. Maybe we’ll invite the girls from next door over for some-Princess gave them all a taste last week and now they are clamoring for my pizza 😉
Saturday: Venison Steaks with Baked Potatoes and Broccoli
Nothing too unusual here-I’ll pan fry some venison steaks, caramelize some onions (because that just tastes good) and make a quick pan brown gravy from the drippings. If there aren’t enough drippings I’ll cheat and use a packet of the dry stuff. Toss a couple baked potatoes in the oven, cook up a frozen package of broccoli & we’ll call it a meal.
This is my venison meal for the week.
Sunday: Leftover Buffet
Because there is sure to be a lot left in the fridge at the end of the week!
