1. The kiddos are off school on Tuesday (today) all day, and we have dentist appointments. I think I’ll splurge and take them out to the Chinese buffet for lunch (yeah-the hygienists are going to LOVE me eh?). Since that will be a large lunch we’ll have a very simple dinner tonight.
2. Yankee Bill has drill Friday, Saturday and half of Sunday–so he won’t be around for meals the first two nights.
3. We have scouts on Wednesday as usual (quick meal please!) and Yankee Bill has a meeting in the early evening on Thursday-so dinner needs to be ready to be eaten early
Taking all that into account here is my game plan:
Monday: Spaghetti with Venison Meatsauce
We made a half homemade meatsauce-ground venison, onions, green peppers and a can of ALDI spaghetti sauce. Put that over some elbow macaroni and called it a meal.
This is my venison meal for the week.
Tuesday: Chicken Soup with Light and Tasty Cornmeal Biscuits
Last Sunday we didn’t have any leftover for leftover night, so I grabbed a sale package of chicken thighs and baked them for dinner. Can I just say on a side note that eating all this nice venison and organic pork is spoiling us? Yankee Bill actually commented “This chicken is tasteless”-which was not a comment on my cooking but rather the chicken itself. Usually if we are going to just eat baked chicken I use a whole bird-for the thighs I usually serve in a casserole or gravy that adds additional flavor!
Anyway, I boiled the bones and the remaining meat to make stock, set that in the fridge for a couple days, skimmed off the fat and it is now in the crockpot with some veggies and the meat picked from the bones for soup tonight.
The biscuits are a new recipe I’ve tried a couple of times-I’ll be posting it later this week.
This is my soup meal for the week.
Wednesday: Cheese Crepes and Green Salad
I frequently do a pancake meal on Wednesdays when Yankee Bill is at pool. I’m feeling the need to switch it up a bit and crepes just sound good. I’ll probably use a blender crepe recipe I found-if it’s good and it works a couple times in a row I’ll post it. We’ll just sprinkle some cheese inside and fold them in quarters the way the street vendors in Paris do 😉 That’s carbs and protien, so I’ll add a nice big salad (I’m loving the little package of 4 artisan lettuce heads at ALDI for about $2.50 right now-they are tasty & colorful-way better than iceberg).
This is my meatless meal for the week.
Thursday: Grilled Hamburgers, Potato Salad and 3 Bean Salad
We are supposed to be sunny and 70 by Thursday, so using the grill just sounds nice. We’ll grill some venison burgers and have potato salad from the big bag of potatoes on the side. I’ve found that the kids like the home canned green beans much better when I do a sort of marinade or light pickle on them and serve them cold-so I’ll use my home canned green beans with some pintos & others to make a three bean salad
This is my bean meal and another venison meal for the week. But really-who’s counting 😉
Friday: Homemade Pizza
Made with the Pizza Hut Crust Clone of course! We might get fancy and do calzones-I’m not sure yet. Most likely Princess will have a friend over to spend the night that night. . . so it’s friends, pizza and movies.
Saturday: Shrimp Stirfry with Rice
I found a couple of bags of shrimp in the freezer-They are starting to crystallize with ice so I figure I better use them up stat! I’ll do a stirfry with some veggies, add teriyaki sauce, serve over rice & call it a meal.
This is my fish meal for the week.
Sunday: Roasted Pork, Rice Pilaf and Broccoli
I’m defrosting an organic pork butt (from my 1/2 pig) right now. I’m not sure exactly what method I’ll use to roast it, crockpot or oven, rub or not, maybe slit & stuff with garlic, rub with rosemary or even just coat with homemade applesauce. Lots of options that are all equally easy. I’ll pair it with homemade rice pilaf and some frozen broccoli
