Meal Plan 5/9

It’s time for another Meal Plan!  I’m valiantly trying to get my life back in order after a month of chaos, so of course meal planning is a big part of that.  I always feel like my afternoon and evenings run more smoothly when I have a meal plan.


These are the considerations for this week:

1. We are running the regular slew of activities this week. Buddy and I have Karate a couple times. Buddy has mountain bike practice in the evening twice. I have a full day in town to run errands. On the not so typical side, I’m going to an Oakridge Boys concert with my mom, Yankee Bill has drill and Buddy is heading out on a scout trip for the weekend. I guess Princess is the only one who won’t be running around this week.

2. In the fridge I have leftover salmon from last week, leftover ribs, two cobs of corn, some venison cube steak I defrosted, and a bunch of vegetables. Of course we’ve got plenty of canned and frozen meats and vegetables in the pantry. I picked up a bag of potatoes last week, so I’ve got those as well.

3. The weather is supposed to be warm and sunny for the first half of the week, then cooler and rainy at the end.

4. As always my goal is to have one venison meal, one fish meal, one pork meal, one bean meal, one meatless meal and one soup meal per week.

Taking all that into account here is my game plan:

Monday: Soup and Bread

I had a few ribs left over from last week, along with two cobs of corn and the beer/pork liquid from braising the ribs (can’t let good stuff like that go to waste).  So I put the braising liquid into the slow cooker along with 4-5 cups of water, and 4 chicken bullion cubes.  I cut the meat off of the ribs and cut it up small, sliced the corn off of the cobs, and then cut up an entire onion and tossed it in.  Simmered all day it made a delicious soup.  I served it with some “French Peasant Bread” from the store.

This is my soup meal and pork meal for the week

Tuesday: Fried Venison Steak with Brown Gravy, Buttered Noodles and Green Beans

I’ll dredge the cube steak in some seasoned flour and then I’ll pan fry it in my cast iron skillet.  The meat will go in the oven to stay warm and I’ll make a brown gravy from the drippings and some beef bullion.  The noodles will be boiled up and tossed with butter and maybe some parm cheese and chives.  Finally I’ll crack open some home canned green beans.

This is my venison meal for the week.

Wednesday:  Curried Lentils over Rice

We haven’t had lentils in a while.  I love the lentil “Dal” you can get at an Indian restaurant, so I’ll find a simple recipe to try.  Whatever I come up with will be served over rice.  If the recipe doesn’t have additional vegetables I’ll add a vegetable side.

This is my bean and my meatless meal for the week.

Thursday: Salmon Alfredo with Green Salad

The leftover salmon will be flaked and added to a jar of Alfredo sauce.  It’s a cheat, but hey, it will be easy.  I’ll serve it with linguine and a green salad.

This is my fish meal for the week.

Friday: Homemade Pizza

Maybe I’ll get fancy and make calzones instead of plain pizza.

Saturday: Breakfast for Dinner

Saturday will be just Princess and I, so I think I’ll keep it simple and make some pancakes and bacon.  Easy to make a small batch, quick and delicious.

Sunday: Roast Chicken with Potatoes and Carrots

I don’t have a whole chicken in the fridge, but I’ll pick one up this week.  It will be roasted with potatoes and carrots.  Of course I’ll make gravy from the drippings.  It’s just a Sunday dinner classic.
