Welcome to a short week, meal plan wise! I’m heading down to NYC for a few days during the middle of this week to attend the Blog World Expo-NY conference!
1. I will be out of town on Tue, Wed & Thurs. I’m going to assume that Yankee Bill will take the kids out at least once, so I’ll plan on two frozen dinners for him to use while I’m gone. I long ago bowed to reality-he won’t cook something that actually involves more than heating up while I’m gone.
2. I’m willing to bet on Fri I’ll be pretty tired and trying to catch up on a bunch of things-so easy would be good.
3. While I’m gone Yankee Bill has to make sure Princess gets to dance recital rehearsals-so it’s probably a good thing that we’ll have some really quick meals. Right after I get back we’ve got Buddy going on a Boyscout campout (and we get to eat supper with them the first night) and then Yankee Bill gone for drill with the New York Gaurd.
4. As always my goal is to have one venison meal, one fish meal, one bean meal, one meatless meal and one soup meal per week. I don’t know if I can fit it all in while I’m gone for part of the week, but I’ll try.
Taking all that into account here is my game plan:
Monday: Baked Trout, Green Salad and Rice
Yeah, I never cooked the fish that I defr0sted f0r Sunday (woops, no fish last week!) so I’ll bake it in the oven tonight and add a green salad (lettuce and some pea pods from the garden)and some rice. That’s probably the healthiest meal we’ll eat all week 😉

Tuesday: Crockpot Macaroni and Cheese
Usually when I go on a trip I try to leave the crockpot bubbling away the first day. That way when Yankee Bill gets home and has to wrangle the kids through all their hoops he doesn’t even have to think about warming up dinner-it’s all hot and ready in the crockpot. If I’m really feeling like supermom I set the table and everything, but with the way I feel this week I wouldn’t count on it.
This is my meatless meal.
Wednesday & Thursday: Frozen Meals
I picked up a frozen family size Salisbury steak and a chicken Alfredo meal, plus I’ve got some pierogies in the freezer. Easy stuff that Yankee Bill can heat & eat, adding a can of veggies to make a full meal.
Friday: Boyscout BBQ
I’m probably going to have to bring a dish to pass for this one. Maybe my Crunchy Asian Chicken Salad? That always goes over well (and my kiddos love eating it for lunch if there are leftovers)
I should be able to whip up a Pizza Hut Crust Clone batch in the breadmaker, since we won’t have had pizza on Friday.
We’ve got the Dance Recital for Princess on Sunday-so either we will grab dinner out (using a coupon!) or we’ll come home and make something simple like sandwiches.
