Menu plan 10/11

Welcome to another great fall week here at Frugal Upstate! As usual I’ve got soccer practices to work around on Thursday & Friday, Yankee Bill has a meeting on Monday & Tuesday night, and if the weather is nice on Saturday we’ll be outside (and unwilling to cook) on Saturday! Then of course Sunday is full with church and two soccer games.

And of course I’ve got to work in a meatless meal & seafood meal at some point!

Monday: Chicken & Broccoli Casserole with Salad

I made a big batch of chicken salad this weekend and there is a lot left. So I’ll use that as the base of a casserole, mixing it with pasta & broccoli.

Tuesday: Old Fashioned Tuna Loaf, Baked Potatoes & Steamed Carrots

Not only is Tuna Loaf delicious-but it is very economical and reheats very well-which makes it great for a busy meeting night! I can even make it earlier in the day to keep the evening less hectic. The carrots will be fresh from our garden-and should be all the sweeter from the frosts we’ve had.

Wednesday: Venison Steak with Onions & Gravy, Roasted Brussels Sprouts & Herbed Rice

We still have quite a few packages of tender Venison loin, and hunting season is almost upon us again! Sauteed onions (harvested from our garden this summer & dried in the shed) with a package of gravy mix will finish it off. We grew the Brussel Sprouts-for the first time-and were told that they were best after a frost. I will slice them in half, toss them with a bit of olive oile & roast them with a bit of pepper & coarse salt. I hope they taste as food as I imagine!

Thursday: Venison Stew & Biscuits

I will toss a quick soup/stew in he crackpot using planned leftovers from the steak dinner and tomato juice as a base. Cooking on low all day in the crockpot will really blend the flavors together. All inwill have to do to get dinner ready before soccer is whip up a quick batch of biscuits.

Friday: Homemade Calzones

Made of course with the Pizza Hut Crust Clone recipe.

Saturday: Hotdogs on the Grill with Coleslaw & Oven Home Fries

I have hotdogs & rolls left over from last weekend, so I’ll just add a couple of sides & call it a quick & easy weekend dinner.

Sunday: Crockpot Cabbage Roll Casserole & Green Beans

A nice hoteal that can be thrown in together in the morning so that church & soccer games don’t derail my dinner plans!
