Another week, another menu plan to keep me on track. Since I’m done with my play I’ve actually got time to do some decent cooking!
Here is where you put the considerations for the week
1. Monday is a half day so the kiddos are home early, Yankee Bill has meetings on Tues & Thurs night, and the kiddos have scouts and dance lessons.
2. Hunting season kicks off on Sat–which means I am a hunting widow for a week or so while Yankee Bill heads up to deer camp. On Fri night the gals and I all get sitters and head out to start out our Christmas shopping and have dinner.
3. Still have fresh veggies in the garden-carrots, Brussel sprouts, Mizuna and chard. I’ve got a couple heads of cabbage in the fridge and STILL have potatoes left on the counter from the garden. I defrosted some venison sausage the other day and only used 2 of 6 patties. I’ve also got some chicken breasts and polish sausage that need to be used up.
4. My goals are to have one seafood, one meatless, one bean, one venison and one soup meal each week.
Taking all that into account here is my game plan:
Monday: Homemade Chicken Tenders, Oven Fries and Sauteed Mizuna
The boneless skinless breast will be used to make homemade baked chicken tenders along with a egg wash and some of my homemade breadcrumbs. I’ll use the potatoes from the garden to make Homemade Oven Fries and then pull some Mizuna from the garden and saute it for our green
Tuesday: Butternut Soup with Cheddar Biscuits
I’ve been meaning to try making homemade butternut squash soup. I’ve got a couple of recipes and to be honest I’m not sure which one I’ll try. We’ll pair it with some homemade cheddar biscuits. This is my soup meal and my meatless meal.
Wednesday: Breakfast for Dinner–Pumpkin (or Butternut) Pancakes and Bacon
I’ll make the pumpkin pancake recipe either with canned pumpkin or possibly with some mashed butternut squash (if there is some left over from making soup). The bacon is from the 1/2 pig we purchased from a friend’s organic farm. Mmmm. Best bacon you ever tasted.
Thursday: Cabbage Roll Casserole
I’ll make my standard cabbage roll casserole in the crockpot, and for the meat I’ll use the defrosted venison sausage. It’s a one dish meal, so I really don’t need to plan anything else. This will be my venison meal for the week.
Friday: Frozen Pizza
Quick and easy meal for the kiddos while I go out with the gals.
Saturday: Red Beans and Rice with Cornbread
I’m testing a new crockpot recipe! The cornbread will be my sweet northern cornbread. This is my bean meal for the week.
Sunday: Leftover Buffet
It will be a little bit of this, a little bit of that. . . whatever is leftover from the week served buffet style.
Hmmm. Didn’t seem to get a fish meal in there.
