So for the first half of the week I am trying to avoid anything resembling Turkey or chicken, as we will be eating plenty of that for the latter end of the week!
Monday: Spaghetti with Italian Sausage and Steamed Vegetables
I need a quick and easy meal since Yankee Bill and I have a meeting to go to tonight! I have some Sweet Italian Sausage in my fridge that I have to use up this week. I”ll slice & pan fry some with onions and add them to jarred sauce, then serve over pasta. The steamed veg will be from the freezer.
Tuesday: Sausage Strata with Sauteed Apples
This will use up the rest of the sausage, as well as a loaf of unsliced Italian bread that I have in the freezer. I’m modifying a recipe that I already have-so we’ll just see if it turns out nice enough to share 🙂 Rather than pairing with a vegetable (nothing sounds right with it) I’m going to take those poor apples hanging in the basket above the sink, peel & slice them then toss them in the frying pan with a drizzle of oil & saute till soft.
Wednesday: Venison Meatloaf, Roasted Potatoes and Crock Pot Collards
Hopefully we will soon have new Venison to add to the freezer, which means I really need to make some room! There is a bunch of the ground venison and ground venison sausage left-mixing those two makes a fantastic meatloaf! The potatoes are from my last shopping trip and the collards are still-believe it or not-out in the garden.
Thursday: Thanksgiving
Friday: Hot Turkey Sandwiches with Gravy, Cranberry Relish & whatever else is left over 😉
Isn’t sandwiches or soup what EVERYONE does the day after Thanksgiving???
Saturday: Leftovers
Dude. Hubs will be out hunting, the kiddos and I will be busy trying to get the house decorated (or at least the part we can do without hubs). A big sit down meal won’t be a priority.
Sunday: Turkey Casserole
It’s a one dish sort of meal! Toss in some of that leftover turkey with all the other bits and pieces of veggies, a binder (cream of soup, leftover dip, homemade white sauce) a bit of cheese and a starch (either pasta or rice most likely) add a bit of spices like salt, pepper and garlic (gotta have the garlic), top with crushed crackers, chips, breadcrumbs or whatnot mixed with a bit of melted butter. Viola. Casserole.
Wait, I should write a whole post on how to create casseroles, shouldn’t I?
