I’m heading out of town this week for a conference starting on Wednesday. It’s the “SoFresh Social Media Cruise”. . .a social media conference on a 4 day cruise from New Orleans to Cosumel Mexico. It’s a tough job, but somebody has to do it.
And don’t worry-I have plenty of great content planned to publish automatically while I’m gone-to include great “Make it for Christmas” posts and even a giveaway. . .
As far as menu plan goes, I’ll be home on Monday and Tuesday to cook, and on Wednesday I’ll leave food going in the crockpot. Then for Thurs-next Mon I’ll have some easy frozne “pop it in the oven or microwave” type meals to make life easy on Yankee Bill. I”ve learned over time that sometimes frugality has to meet reality when it comes to my husband and meals while I’m gone.
Monday: Chicken Pot Pie
Princess told me this weekend that “Chicken pot pie sound good-we never have that”. Who am I to argue? The local grocery store had chicken thighs on sale for $.69 a lb, so I bought two packages and baked them up for dinner-so I have plenty of chicken cooked and ready to go.
Tuesday: Homemade Calzones
Since I won’t be around on Friday, I’m doing my homemade pizza meal early this week. Calzones are always a fun twist on the pizza-just make the Pizza Hut Crust Clone dough, then roll out small balls of dough, put a spoon of sauce, pinch of cheese, and a sprinkle of parmesean cheese. pinch it shut and bake. Yum.
Wednesday: All Day Macaroni and Cheese
This All Day Macaroni and Cheese recipe is my standard “leave it cooking in the crockpot when I’m heading out of town” meal. It tastes great, the kids & Yankee Bill love it, and it reheats well for dinner or lunches later. It’s a win all the way around.
And what will I be eating the rest of the week? Why-whatever they serve me on the ship
