Time for this week’s menu!
Monday: Homemade “Hot Pockets” and salad
Today is a federal holiday, so Yankee Bill (a state employee) had the day off. We took the kids out for breakfast at the Cracker Barrel as a treat-and they have BIG food. They probably won’t be ready for lunch till mid afternoon, and then by dinner something fairly light will be fine. I have had Pizza dough in the fridge since Friday (we wound up using one of my “emergency” frozen pizzas last fri instead of the dough I had in the breadmaker). I’ll use small pieces of that to make ham or pepperoni hot pockets.
Tuesday: Tacos with refried beans and rice.
The kids love tacos, but the inevitable table mess makes my husband wince. So a day when he has a 5pm meeting and will eat a late dinner by himself is the perfect time to have tacos! I’ll use ground venison from the freezer & most likely use canned diced tomatoes that have been well drained instead of the overpriced and underflavored so-called “fresh” ones from the store. Rice is from the 25 lb bag, and the refried beans are fat free, from a can.
Wednesday: Lentil soup with homemade bread & carrot sticks.
This is my meatless meal for the week. I usually make my lentil soup the sMe way as split pea soup-so that’s the plan unless I see a great lentil soup recipe before then. The bread is from my weekly baking-and the carrot sticks are an attempt to pretend we are getting some veggies.
Thursday: Ginger-soy baked fish with stir fried veggies and rice.
This is-obviously-my fish meal for the week. Veggies will be made from frozen bagged mix. fish is the Aldi’s brand frozen fillets.
Friday: Pizza
Homemade
Saturday: Baked Chicken with roast potatoes and green beans.
Simple, easy, filling. What more cod you want?
Sunday: Leftover buffet
We’llneitjer use up the leftovers as a buffet, or I’ll turn it all into a curry if there isn’t enough of any one thing to make a meal.
There you have it! I apologize in advance if there are any typos or weirdness in this post-I wrote the whole thing on my iPhone while sitting on the floor of the “Jumping Jungle” while the kids are enjoying the special free jumping time. (my favorite price)

Lentil Soup Recipe
Bring 1 bag of lentils, 5 C. water, 4 beef bouillon cubes (or equivalent powder), 2 bay leaf, 2 tsp. salt to a boil. Simmer 40 minutes or so (I often go much longer because I’m very forgetful).
Add 1 lb. diced ham, browned sausage or browned hamburger (or go meatless), 1 1/2 C. tomato paste, 4 C. water, 1/2 tsp. oregano, 2 tsp. salt (to taste, some ham may be too salty already and you won’t need more), 2 onions chopped, 4 stalks celery chopped, 2 cloves garlic minced. Bring to a boil and simmer another half hour or so.
Makes enough to freeze half for another meal later. I serve it with cornbread and the kids eat it up.
