As we get closer to Christmas it seems like our schedule gets more & more hectic! Not only is Yankee Bill gone for meetings 2X this week, he’s also going to be gone all weekend. We’ve got girl scouts and a kids Christmas concert to deal with as well. Fun times! Busy schedules! Quick and easy meals!
Monday: Grilled Cheese Sandwiches and Tomato Soup
Hubs & I both have meetings, so it’s just the kids sitting down to dinner. Grilled cheese & tomato soup are always a winner-as long as I use real cheese and not “American”. Both of my kids dislike American cheese. Weird eh?
Tuesday: Salisbury Steaks w/Gravy, Rice and Roasted Brussel Sprouts
I made Salisbury steaks out of some ground beef, venison & onions a few weeks back and froze them-so I’ll just pull them out (still frozen), stick them in a covered dish with brown gravy and bake them. Rice in the rice cooker and the last of the brussel sprouts (which I rescued from the garden this weekend) will make a great meal.
Wednesday: Crockpot Cincinnati Chili over Noodles with Steamed Carrots
It’s been a long time since I’ve made Cincinnati chili-it will be a nice twist! The classic way to serve it is with cheese over pasta. On the side I’ll steam up some of the carrots that I *finally* dug out of the garden last weekend.
Thursday: All Day Crockpot Macaroni and Cheese with a Green Salad
We’ve got a school concert on Thursday night, so a crockpot meal is just the ticket. I’ll start it in the morning and it will be ready whenever we need to have dinner without any fuss. This will be my meatless meal for the week. Plus the leftover All Day Crockpot Macaroni and Cheese will make great lunches packed into a preheated thermos.
Friday: Pizza
Using the Pizza Hut Crust Clone recipe. Big surprise eh?
Saturday: Leftover Buffet
Because I want something easy, and I want to use up all the leftovers. Woohoo.
Sunday: Baked Fish with Pesto Pasta and Steamed Veggies
I have a whole bag full of fish from my BIL down in the freezer. I’ll just bake it with a bit of butter and some creole seasoning on top. For the pasta I’ll pull out one of the frozen cubes of pesto I made, melt it in the microwave & toss it together. The veggies will come from a bag. This is my fish meal for the week (I’m trying to get back on track with that)

mmmm! being from Cincinnati, Wednesdays dinner sounds great! Does your recipe call for chocolate? That is supposed to be the “secret” ingredient in the famous Skyline chili. My uncle makes it this way and it is fantastic! Enjoy!
