This is the “I’m just back from a conference” edition of the weekly menu plan
Monday: Frozen Pizza
I’m actually arriving home at about 8:30 pm, so I’m keeping it easy for Yankee Bill.
Tuesday: Spaghetti & Meatballs with Steamed Vegetables
I always try to have some cooked frozen homemade meatballs in the freezer. That makes this a super simple meal. Boil water. Add noodles. Nuke meatballs, add jarred sauce, reheat.
Trust me, the first day back after a conference is not a day to do anything complicated.
Wednesday: Chicken and Biscuits, Brussel Sprouts and Beets
I was on a roll with the B’s. No really. Chicken & biscuits are pretty easy, I’ll use the very last of the Brussel Sprouts and a can of beets.
Thursday: Venison Stir Fry with Rice
I’ll stir fry some of our venison with onions (garden fare) and a bag of purchased frozen stir fry veggies, then serve it with rice.
Friday: Homemade Pizza & Salad
Using the Pizza Hut Crust Clone recipe of course.
Saturday: Potato Pancakes
Yeah, Potato Pancakes are not the healthiest meal we eat all year-as a matter of fact unless you count ketchup and applesauce as a veggie it’s pretty much just a whole meal of fried potatoes, but it is a tree decorating tradition in our house, along with a nice glass of Gluhwein for the adults! Kiddos get mulled cider.
Sunday: Baked Chicken with Rice and Broccoli
I’ve got to make up for the nutritional deficiencies of the potato pancakes
Baking a whole chicken is delicious, plus it’s usually a very cheap way to buy your chicken. The leftovers are great for future meals and the bones make soup. I love baking a whole chicken. The rice can be going in the rice cooker while the chicken bakes, and frozen broccoli only takes a few minutes in the microwave or steamer.

I fed my kids lunchables Saturday night because I was running late for a Christams party and I wanted them to have something in their tummys as I was unsure of what types of food were going to be offered at the party. In reality having them fix peanut butter sandwiches would have been nutritionally better and the fixings were at home. SO I understand on the nutritional value issue, but I think you do a great job in preparing your kiddos meals, one night of fried potatoes is not gonna hurt once in a while. SOmetimes we even eat popcorn for dinner on the weekends if our lunch was too big!! LOL!!
