Summer is in full swing! The garden is starting to kick it up (I think squash is on it’s way). The kids are in day camp and life is good!

So each week has it’s own considerations-here’s what I’m working with
1. Scouts, Dance, etc are all done for the year, which opens up the evenings. Yankee Bill normally has pool on Wednesday nights, but since that’s the holiday they are not playing. He does have a meeting for an organization we belong to on Thursday. We currently have no plans for the 4th.
2. I’ve got a doctors appointment on Tuesday and will be running some errands in town-so I’m betting the kiddos and I won’t be in the mood to do a big cooking extravaganza that night.
3. Princess has been helping with dinner-I’ll let her pick the meal we cook one evening.
4. There is a pound of venison sausage defrosted, a couple of pounds of sale chicken that I grilled, and a bit of ham which also need to be used. The garden still has a few peas, tons of lettuce, some radishes and a variety of Asian greens. The zucchini looks like it’s getting ready to ripen any time.
5. As always my goal is to have one venison meal, one fish meal, one bean meal, one meatless meal and one soup meal per week.
Taking all that into account here is my game plan:
Monday: Venison Sausage Gravy, Bread and Greens
I browned up the sausage, took half of that and made white gravy and served it over the bread. I sauteed up a large onion, and tossed in some Spicy Red Indian Mustard and some red lettuce.
This is my venison meal for the week.
Tuesday: Asian Lettuce Wraps with Fried Rice
These were on the menu a couple of weeks back-they didn’t get made because the temperature hit 95, the chicken wasn’t cooked and we decided to head up to the campground for cooler weather and the RV’s air conditioning.
I’ve already grilled the chicken, so I’ll slice a breast or two up and marinate it in some Asian type sauce (I’ll make it up as I go). I’ll shred some radish and get some bean sprouts to toss with a vinaigrette. Those will be the filling for the large lettuce leaves I’ll pick from the garden.
The fried rice will be rice, radish, peas, mizuna etc from the garden with some egg.
Wednesday: Quiche with Salad
I need to make a couple of meals to send to a parishoner who is coming out of the hospital on Friday-so I’ll make a couple of cheese quiche. I’ll pair mine with a salad from the garden-the other I’ll stick in the fridge until Friday.
This is my meatless meal for the week.
Thursday: Princess’s Choice
I’ll let Princess choose and cook the meal.
Friday: Homemade Pizza!
Using the Pizza Hut Crust Clone recipe of course.
Saturday: Ham and Bean Soup with Biscuits
I’ve got leftover ham and I’ll use some dry beans (soaked overnight of course) and make a bean soup in the crockpot. I’ll toss in some greens from the garden as well.
Sunday: Leftover Buffet
Because there will be leftovers!
