What’s on the menu at the Frugal Upstate Household this week?
Monday: Pumpkin Black Bean Bake, Spanish Rice & Green Beans
I am always fascinated by the pumpkin recipes that you find in magazines and online in the fall. This particular recipe caught my eye several years ago-I clipped it out and have yet to try it! It’s supposed to be a bit like a tamale pie. . . so we shall see! If we like it, I’ll post the recipe later this week.
For sides I’ll use a homemade Spanish rice, and steamed green beans from the garden.
Tuesday: Ginger Soy Fish, Sesame Noodles & Stir Fried Veggies
The Ginger Soy Fish is an easy recipe that you can use the microwave for! I’ll use some frozen Whiting fillets that I’ve picked up at Aldi’s (it’s one of the cheapest fish to buy around here) for the recipe. This is, of course, my seafood meal for the week. I’ll make a Sesame Noodle side dish, and then do a “clean out the crisper drawer” style stirfry-probably incorporating cabbage from the garden to bulk it out.
Wednesday: Breakfast for Dinner
Yankee Bill won’t be home on Wednesday evening this week-so we’ll do one of the meals the kids love but he isn’t too fond of. Breakfast for dinner! Pancakes to be exact. I’ll probably have a side of bacon for just a touch of protein. Even though bacon is indeed familial-I am counting this as my “meatless” meal. The point of having a meatless meal is not to be vegetarian, but rather to save money by avoiding a costly “main dish meat”. 6 slices of bacon barely count.
Thursday: Crockpot Chicken Jambalaya over Rice
Thursday is soccer night-so we are at the field until almost 7. I love having a meal that is ready & waiting in the crockpot when I get home. I’ll be using the leftover chicken from Saturday’s roasted chicken supper in this meal. If there is leftover Spanish Rice from Monday we’ll use that for the rice (the tomato based Jambalaya should blend well with the tomato in the rice) otherwise I’ll set a fresh pot to cooking in my rice maker right before we head out the door for soccer.
Friday: Chicken Parmesan over Angel Hair Pasta with Steamed Garden Veggies
For a twist on my typical Friday Pizza, I’ll make homemade chicken parm. With the tomato & cheese topping the chicken breasts it’s actually a very similar taste.
Saturday: Taco Bar
We’ll make a delicious, and messy, make your own Taco bar for dinner. Along with the regular cheese & veggies we’ll have canned fat free refried beans & rice that can be used as side items.
We’ll set up all the leftovers and let folks eat “a little bit of this, a little bit of that” on Sunday. Let’s face it-a big sit down Sunday dinner sounds great, but when you are at church all morning and soccer games all afternoon there just isn’t a lot of gumption left for cooking by the evening.
