This week I managed to work in two mostly meatless main courses, although no fully meatless meal. Do two partials make a whole? I didn’t, however, manage to work in a seafood based meal. Maybe because I don’t have any seafood in the house.
Here we go!
Monday: Spaghetti Carbonara, Tossed Salad, carrots & Garlic Bread
Ok, so technically Spaghetti Carbonara isn’t a meatless meal-there is bacon in it. The bacon is however more of a seasoning than a main course, so (since it’s my world) I count it. The carrots are from the garden and the garlic bread is homemade!
Tuesday: Easy Chicken Tandoori, Rice, Naan & Creamed Spinach
I love Indian food! The Tandoori recipe is new for me-Although the marinade has a lot of ingredients and needs to set for a long time, that’s work that is done the day before on your own schedule. Cooking it will be easy & straight forward. That will give me time to make the Naan & Creamed Spinach (which isn’t exactly like the Saag I love at the restaurant).
Wednesday: Venison Stroganoff, Baked Potato & Roasted Beets
Hunting season is coming up-so we need to really get to work on using up the venison in the freezer. I think this time I’ll be using ground venison rather than sacrifice any of our loin to Stroganoff. I didn’t have much luck with potatoes in the garden this year, but I do have about 4 good sized ones that I’ll bake. The beets are from the garden.
Thursday: Ham, Bean & Greens Soup with Homemade Biscuits.
Not only do we have soccer practice on Thursday, but we are double booked with open house at Buddy’s school-so I need something that can be ready to eat whenever folks feel like it. Soup fits the bill. I have ham “bits” down in the freezer from the last time I bought a couple of hams on sale. Mixing it with beans & greens makes a flavorful, healthy soup.
Friday: Pizza
We’ve actually gotten out of the habit of making pizza every Friday over the summer-we are trying to get back “in the swing”. Of course I’ll use the Pizza Hut Crust Clone recipe, it’s my family’s favorite.
Saturday: Leftover Buffet
It always helps to plan in a day to use up leftovers.
Sunday: Apple Sausage Strata with Green Beans.
This is an interesting main dish casserole that combines apples, sausage, onion & bread. I love it, Yankee Bill & the kids tolerate it.
