Dear Frugal Upstate-
Do you have a suggestion for how to make your Overnight French Toast Casserole egg-free? My son is severely allergic to eggs and dairy, but I would love to try something similar. I’ve made traditional french toast before with bananas and soymilk, but not sure how that would work here. Any ideas?

Great question Kristen! I know that cooking for special diets can be especially challenging, and of course you want your son to be able to enjoy breakfast with the whole family.
I did a bit of research and found a couple of recipes that use soy milk and flour instead of the egg to give the batter a similar texture. For examples there is one at Nutrition MD and another at the King Arthur Flour blog.
I haven’t tried either recipe, so I can’t give them any type of personal endorsement. What about the rest of you? Have any of you ever made eggless french toast? If so, please help Kristen out!

I’ve actually tried the recipe at NutritionMD and I thought it was pretty good. The one thing that was definitely different was the texture. Soy milk and maple syrup just don’t create the same fluffiness that you get with eggs!

For any dairy and egg free recipes,there are lots of vegan cookbooks to buy, and websites like vegweb.com and vegetariantimes.com. I’ve seen a lot of recipes for french toast with no eggs or milk in these books & sites. Hope that helps.

Would it be possible to use the powdered egg replacer? It has no eggs in it.

There is a product called energy egg replacer. You should be able to get it at a health food store. There are also ideas at foodallergy.org/allergens/egg.html. Also try recipezaar.com/library/getentry.zsp?id=424
