Today in honor of deer hunting season opening in my area on Friday, I am posting Yankee Bill’s famous “Two Can Stew” recipe that he makes every year for the guys at deer camp. It’s also a frequently requested dish on our camping trips!
Now Yankee Bill is not much of a cook. He does scrambled eggs and a few variations thereof, grilling and heating up for the most part. I’m the real cook in the house. But this recipe, as he says, “is so easy that even I can do it”. Not only that but he gets rave reviews from everyone who tries it!
Yankee Bill’s Two Can Stew
Ingredients
- 2 lbs of 85-90% Lean Ground Beef or ground venison
- 1 Onion Chopped
- 1 Green Pepper Chopped
- 2 cans Kidney Beans
- 2 cans Green Beans
- 2 cans Fiesta Style Corn
- 2 cans Diced/Stewed Tomatoes we like using Rotel style
- 1 pkg Taco Spice Mix
- 1 pkg Dry Ranch or Italian Salad Dressing Mix
Instructions

In a large pot brown ground beef with the onions & green pepper. Do not drain (which is why the lean meat is important)

Open your cans of beans & corn and dump, with all their liquid, into the pot.

Add your taco & dressing mix.

Stir.

Cook till all flavors are melded & liquid slightly reduced (say about half an hour)

Serve.
That really couldn’t be easier could it? Now I’m not going to say it’s health food, and you probably should be careful if you are on a low salt diet. . .but it is tasty and easy. Even a non cooking type guy can make it-and it’s enough to feed a crowd. It is also one of those dishes that tastes even better reheated the next day! And because it’s made mostly with pantry staple type items-like canned veggies-it’s a frugal meal as well!

I’m with Bill, why keep a dog if you have to do the barking yourself. My wife is a great cook, I make coffee and iced tea.
