You already have zuchinni? My plants have like 3 leaves and a single flower at this point. You are obviously in a much more temperate climate.

Well, I have some zucchini that my neighbor keeps passing on. I've already made my Zucchini Pineapple Muffins. Froze some zucchini in disks (glad to see your note about putting them frozen in the stir fry. I was worried about them tasting right out of the freezer). Now with all these other zucchinis... I just wasn't sure what to do with them.

But I never considered dehydrating them. Always learning something new. Thank you. :)

Anna-you should try the pickles. I just made a second batch, and they are getting "quicker" to make now that I'm getting used to the recipe. This time I just made them and packed them (after boiling) into jars and put them in the fridge for eating in the next few weeks.

Annette-I love the muffins too!

Maine Mama-Hey! I grew up in Maine, Eddington Maine to be exact (between Bangor/Brewer and Ellsworth on rt 9). Hope you try and enjoy the recipe.

I have a big fat zuke sitting on my counter. Tomorrow it becomes bread. I love the idea of pickles. My kids are pickle freaks. This is definitely a recipe to try!

Yum! My mom makes zucchini pickles, but I've never done it. Now I'm thinking I should! I've got plenty of zucchini coming from my garden now. I shredded and froze 6 packages yesterday. I've never tried just slicing and freezing for stir frying. I'd love to hear how that works out.
