I told you all this weekend that I have an opportunity to do an email interview with Chef Chris Lee, Executive Chef of the Gilt restaurant in New York City’s Palace Hotel.
Here are the questions I’ve gotten so far.
I’m always curious to know what foods chefs make at home, for themselves and/or their families. Or their favorite go-to meal that’s quick to put on the table when everyone’s hungry.
How about a “wow factor” menu that’s won’t break your bank account or dirty up your whole kitchen?
I would like to learn how to make a really yummy consumme’.
So what else would you all like to know?

I love cookbooks, so I would like to know his favorite cookbook for everyday type recipes. Not one that has lots of fancy recipes, just your basic everyday go to cookbook. Thanks.
With Thanksgiving right around the corner, lots of questions for “Thanksgiving Basics 101!”
-What tips do you have for the perfect turkey?
-What’s the secret to perfect basic mashed potatoes?
-Are there really any dishes that can be made a day or so ahead and still be tasty on turkey day?
-Any recipes for an easy and frugal, yet scrumptious side dish?–How do you time a meal so that everything is done right around the same time?
-What do you think are the important Thanksgiving cooking basics the average chef should know?
So, those are some of the questions I think the average person (me?!) might have. I just think it would be nice to have a Thanksgiving related question asked.

What items are always in the chef’s pantry and fridge at home?
My 14 year old son is hoping to become a Pastry Chef one day. What kinds of things could he be doing now to prepare for this type of career?
Jennifer’s question above was one of mine. I’d definitely like to hear about what he cooks at home.
I’d also like to know what tips and tricks he has to make cooking easier. I bet he’s got lots of them.
