Menu Plan 3/30

I’m a little off kilter this week, so the weekly menu plan is a day late.

Monday:  Gnocchi with Meat Sauce & Salad

Aldi’s had Gnocchi a couple of weeks ago, so I had purchased some for the pantry.  I know how to make them from scratch, but it is a bit labor intensive so I figured they would make a quick & easy meal some night. . . and they did!

Tuesday:  Venison in Gravy with Rice & Green Beans

I will use some of the venison we canned last fall-it’s very tender and warms up in just a few minutes.  Between the natural juices in the can and a packet of brown gravy mix I should be in business in no time.  The rice will cook up in my rice cooker with no supervision, and the green beans are some of last years garden produce still in the freezer.

Wednesday: Bean Burritos, Carrots & Salad

Just an easy, nutritious (as long as I don’t go nuts with the cheese) and meat free meal.  Cooking doesn’t get much easier than this!

Thursday:  Homemade Stir Fried Rice

It’s been a while since I’ve made stir fried rice.  If I have any leftover veg or meat I’ll toss it in, otherwise I can use odds and ends from the crisper drawer with either some luncheon meat or defrost a small package of venison.  I have play rehearsal so a quick and easy meal is order of the day.

Friday: Calzones

Naturally.  With my Pizza Hut Crust Clone recipe of course.

Saturday: Rueben Sandwiches, Coleslaw & Homemade Steak Fries

When I bought the ingredients for Rueben Dip way back when (about 2 months ago now) I froze extra corned beef & cheese.  I’ll make some rye bread in the bread maker (I’ve got the rye flour) and then we’ll use the Panini press I won at a conference last summer to make the Reubens.  Mmmm.  The Steak Fries are a homemade oven recipe I have.

Sunday:  Easter Dinner! Smoked Turkey, Sausage Stuffing, Roasted Potatoes and whatever side dishes my Sister in Law and Mother in Law bring.  I will make dessert as well-I’m thinking either Carrot Cake or a Pie. . .

Aldi’s has fully cooked smoked turkey’s-it is a great “warm it up” type meal-which is great when you are feeding a crowd.  I’ll make my Grandma Phyllis’s Sausage Stuffing to go with it, along with some potatoes.  I’ll assign my MIL & SIL some side dishes-vegetable & jello in nature most likely.

Great looking menu. I’ll admit to flying by the seat of my pants this week. Tonight we’re having actual shepherd’s pie. I ran across some lamb on sale, something we’re just starting to have available.
My husband’s work schedule is off-kilter (he’s working a lot more) and it’s hard to work up the enthusiasm sometimes.
