Menu Plan 3/8

Here we go with this week’s menu plan.

Monday:  Baked Chicken, Baked Potatoes & Mixed Vegetables w/Biscuits

I don’t know about where you are-but here roasting chickens run about $.79 a lb.  That’s pretty darn cheap protein.  One chicken will not only provide a lovely dinner, but also meat for at least one other meal and a pot of soup from the carcass.  (I just love saying carcass!).

Tuesday: Lentil Casserole, Tossed Salad & Homemade Bread

I haven’t made Lentil Casserole in a long time-this is a very filling & tasty meal that even my meat loving hubs is happy to consume. It will be my vegetarian meal for the week. This makes a large 9X13 pan of casserole so I will use a bit later in the week as my protien and I will freeze portions to use as low calorie high fiber filling lunches for myself.

Wednesday: Wendy’s Chili Clone & Cornbread

I just love a meal you can toss in the crockpot and forget about.  This Wendy’s Chili Clone is an inexpensive family favorite.  I might even drag out the pressure canner and try canning some up for future quick and easy lunches.  Freezing of course would accomplish the same thing.

Thursday: Spaghetti & “fake” Meat Sauce with Roasted Broccoli

I’ll used my planned leftovers from the lentil casserole instead of ground meat in the spaghetti sauce. Trust me-no one will be able to tell the difference and it adds a great low fat, high protein, high fiber kick to a plain spaghetti meal. I make roasted broccoli the same way that I do my Roasted Green Beans.

Friday: Homemade Calzones, kids choice vegetable

I’ll make my homemade calzones with the Pizza Hut Crust Clone recipe.  The kiddos have been on a calzone instead of pizza kick lately.  Not sure why-I think kids just like things that come in pocket shapes :)

Saturday: Venison Stirfry w/ Homemade Fried Rice

Since we ran out of rice two weeks (and haven’t wanted to make a special trip into town) ago I’ve been avoiding stirfry.  Stirfry without rice just seems wrong somehow!  But I’ll be running errands in town this week and have a chance to stop by the small, out of the way Asian market that I prefer to pick up another 25lb bag of rice.  Then I won’t have to think about rice again for another 4 months or so.

Sunday: Baked Ginger Fish, Leftover Fried Rice & Mixed Vegetables

This is my fish meal for the week.  I continue to try to enhance my family’s health by including a fish meal once a week. This simple and tasty ginger fish marinade dresses up plain old pollack filets.
