I was always told by middle eastern friends(and when I&#039;ve gone overseas to Turkey and other middle eastern countries for the military) that shish refers to lamb, so calling a beef kabap or kabob &quot;shish&quot; is a no-no. But hey, i&#039;m not Turkish like you are so i&#039;ll leave it at that.

I am Turkish so I know. Kebab (in our case kebap) is any kind of meat that is cooked on a grill. Since lamb is tender, most people prefer lamb for kebaps but, chicken, all sorts of red meat, some fish and veggies can be cooked on a shish. They will all be called shish kebap.
