Menu Plan 7/6

I feel like I’ve done nothing but eat for the last three days. Boy-it makes me feel bloated and chubby, even though I KNOW there is no way that I actually look any different.
But the lettuce and greens are finally up in the garden-so I will be having LOTS of lunch salads this week to help me feel “more trim”.
On to the menu-
Monday: Sweet & Sour Hotdogs, Rice & Salad
We have left over hotdogs from our Sunday afternoon family BBQ-I’ll cut them into little slices and use my homemade sweet & sour sauce. The rice is leftover from Thursday, and the green salad is again from the BBQ~made with a lovely lettuce mix straight out of my garden no less.
Tuesday: Chicken Picatta, Noodles w/Pesto & sauteed Mizuna
The chicken is the breaded, pounded & cooked chicken I made last week then froze with a quick white wine & lemon style reduction/sauce whipped up to go over. I’ll boil up some pasta and make a quick batch of pesto from the basil in the garden (hopefully if I just take a leaf or two per plant. . .) and then I’ll sautee some of the Mizuna from the garden. Yes-I know Mizuna is Asian and everything else is Italian. We’ll live. Call it a fusion menu.
Wednesday: All Day Macaroni & Cheese, Green Salad
I have a very, very exciting day planned on Wednesday-consequentally I’ll be out of the house all day. . . All Day Mac ‘n Cheese can cook away all day in the crock pot with no help from me. As a bonus this fulfills my desire to get back on the “one fish, one meatless meal a week”.
Thursday: This and That Curry & Rice
I’ll use up all the bits and bobs in the fridge to make a curry & pair it with some rice. This and That Curry is easy, frugal and in reality necessary-if I don’t use it up it will get thrown out!
Friday: Homemade Calzones
I’ve been making the Pizza Hut Crust Clone recipe and using it to make little calzones instead of pizza for the last few weeks. They are SOOOOO good. I use regular pizza fixings inside, but also have done chunked up chicken with cheese. Mmmm.
Saturday: Christmas in July at Nana’s
Yankee Bill’s mom started a tradition about 6 years back of doing a Christmas in July with the whole family (more on that soon). This year’s party is on Saturday. After a big blow out family style BBQ in the afternoon, I doubt we’ll be up for dinner. I’m going to be bringing my Fruit Kabobs again. If the kiddos are starving when we get home we can chuck together some grilled cheese & tomato soup.
Sunday: Soy Ginger Fish, Bread & Green Salad
There’s that fish I’m trying to work in to the schedule! The Soy Ginger Fish recipe is quick and easy-you can even cook it in the microwave! I’ve got some inexpensive whiting in the freezer (hopefully my lovely BIL will start providing me with more trout soon! He loves to fish, hates to eat it). I’ll have baked some fresh bread by then and will pair it with another salad from the garden. I’m determined to use that lettuce this year and not just feed it to the compost.
