Menu Plan Monday

Travel is done for a few weeks, so I’m trying to get back to a schedule!
I did a decent job of cleaning out the freezer (my goal for the last month or so). There is actually a bit of room in there now!
This week I’ll be starting out with some fairly easy stuff-my brain is a bit baked from all the travel. To be frank, I need to rest up a bit for a few days!
Monday: Spaghetti & Meatballs with Green Beans
I’m just trying to keep things simple. Jarred sauce, box of noodles, frozen homemade meatballs, frozen greenbeans. Are you seeing a theme here?
Tuesday: Ridiculously Easy Crock Pot Venison Roast, Rice & Gravy and Beets
Another “stick it in the crockpot & forget about it” meal-super easy. The rice can be thrown in the rice cooker in the evening, and the beets will get pulled out of the garden an hour or so before dinner.
Wednesday: Betty White’s Chicken Wings, Salad & Rice
We bought chicken wings for our camping trip over Columbus Day and never wound up using them. . .so I have 4 bags down in the freezer. Yankee Bill plans to take some to “Deer Camp” but I figured I better find a way to use some of them. This “Betty White’s” recipe from Recipezaar looks delish!
Thursday: Venison Curry with Rice
I’ll use the Vermont Curry cubes with leftover venison roast, veggies etc.
Friday: Homemade Calzones
With my Pizza Hut Crust Clone recipe.
Saturday: Harvest Dinner at Church
That means no cooking for Mama!
Sunday: Soup & Homemade bread
If there is any beef or chicken left that will go in the soup, otherwise I’ll break out a bit of chicken from the freezer. With frozen broth, bullion cubes and the odds & ends from the fridge thrown into a crockpot for the day we should have a nice warming soup.

It’s a spaghetti and meatballs night here, too. I’m throwing them in the crockpot for the babysitter. She can handle noodles. This week is going to be nuts. I’ve already pulled most of the meat to thaw so I can’t use that as an excuse.
Last night was spaghetti night here. The good thing about tonight? Wife isn’t working so she gets to come up with what to make for dinner. Daddy gets to just sit back and enjoy!
I was just noticing, there is a lot of meat on the menu. I’m no vegetarian, but I do try and eat lower on the food chain with meat only a few times a week.
Imagine how much thriftier you could be by changing up your proteins for beans, tofu, nuts or eggs a few times per week.
Just a thought.
Thanks for all the venison recipes! Deer camp just finished up at our house (no deer yet) but it’s nice to have a few great recipes stashed away for when the freezer is full.
OK, you’re holding out on us. Cough up the Pizza Hut Calzone clone recipe!!! I’m always in need of something new and different in my menu planning. Pretty please.

Heather-Spaghetti & Meatballs is a classic for a reason!
Micheal-I wish someone else would do all the dinners around here, but I’m the one stuck with the job
Actually I like to cook-I hate to clean up though.
Daniel-Yes,cutting back on meat is a great (and healthy) way to reduce your food budget. I actually use a lot less meat per dish than one might suppose-I try to think of it more as a flavoring. However sometimes it just is a meat type meal!
Adrienne-Hunting season is just starting around here-I’m sure I’ll be posting even more venison related recipes soon!
Amy-Well Kelly beat me to the punch! The link she gave is indeed the one to the Pizza Hut Crust Clone.
