Recipe: Gurkensalat (German Cucumber Salad)

I love to serve this homemade Germany style cucumber salad with my Schnitzel and German Egg Noodles (Spatzel). It’s light and cool. ..not to mention tasty.
GurkenSalat (German Cucumber Salad)
2 cucumbers sliced thin (I use my food processor). 1/8 tsp Pepper 1/4 tsp Salt1 1/2 TBS Sugar
1/2 TBS Cider Vinegar
1/2 C Sour Cream
1 TBS Parsley, fresh, minced
Toss cucumber slices with salt, pepper, sugar & vinegar and marinate for 20 minutes.
Drain & mix with sour cream and parsley.
Chill for 30 minutes to let flavor develop.

Mmm, this is one of my favorite dishes! My grandma used to make it when I was little – but we called it by the Hungarian name of uborka salata.
My great grandmother’s parents put her on a boat to the U.S. from Austria-Hungary at age 16, and she never saw them again. She was a fantastic cook. I always wish I had been able to spend more time with her to learn her stories and her recipes, but she was nearly 90 by the time I was born
What a great family story. . . its amazing when you think about how different life was back then-I can’t even imagine leaving everything I ever knew like that. . . wow.
