This Week’s Menu Plan

So I started this post on Monday. . . and then never finished it.  Who would have thought two weeks off would make it so hard to get back into the swing of things!

Monday:  Chicken Pesto Soup & Homemade Bread

I pulled some cooked chicken out of the freezer and tossed it in the crockpot with homemade frozen broth, a cube of homemade frozen pesto and a mishmash of veggies from the fridge.  In the last 30 minutes or so I added some leftover spaghetti noodles. Served with fresh bread it was delicious!

Tuesday:  Sausage/Rice skillet with Roasted Green Beans

Venison sausage sauteed with frozen peppers (from last year’s garden-I found them buried in the freezer!), green onions from the garden (aka snipping a few greens off the onions in the garden), lovage, a can of Aldi’s brand cream of mushroom soup and a generous couple of scoops of cooked rice made a nice little one dish meal.  I took some of the frozen green beans I had purchased at Aldi’s-the really nice thin small ones-and did my roasting technique on them.  Not as good as fresh beans, but not bad.

Wednesday:  Hamburgers, Potato Salad & Peas

Last time I made venison/beef hamburger patties I made some extras, put wax paper in between and stuck them in the freezer.  Viola, quick and easy meal.  I boiled up a couple of potatoes, made a quick dressing of mayo, sour cream, chives, lovage & spices for the potato salad.  The peas were out of a can.

Thursday: No dinner-I’m at a mtg

Friday: Homemade Pizza

Naturally!  And of course I’ll use my Pizza Hut Crust Clone recipe.

Saturday: Crock Pot Teriyaki Venison Steak, Steamed Veggies & Rice

Saturday is going to be one of those days where we are all running in a million different directions all day.  There won’t be much time to breathe, no less cook! Crockpots were made for days like that.  Throw everything in that morning (or even the night before), start it and forget about it until it’s supper time.

I’m just going to add some frozen steamed veggies on the side and cook up some rice in the rice cooker to complete the meal.

Sunday:  Quiche & Salad

Another busy day that includes a church event from 4-5pm followed by snacks.  Dinner will need to be pretty much instant after that since the kiddos aren’t big on waiting.  I’ll actually prepare and cook the quiche earlier in the day and then it can be either eaten cold or warmed up a slice at a time in the microwave.

So that’s the plan!  Tune in on MONDAY next week-yes, really, MONDAY, and I’ll have that menu plan up in a timely fashion.

Jenn,
i bought the stouffer’s teriyaki chicken skillet dinner for a night when I am in a rush to avoid the out to dinner night. 2 for $7, I thought not too high. It says on the package it feeds 4, I made the two since there is five people in our family. I feed three people and had to throw together sandwiches for myself and my picky 6 year old. Was not a good buy when it did not feed the entire family although the taste was decent. I avoided eating out, but sandwiches are not the way to go when I need brain fuel to study! Next time I need three packages, i thought I would give a warning to your readers sometimes those portions are ridiculously small in the convience packages!

Heather-Wow, I had no idea the archives were missing! There is a behind the scenes blog redesign going on, and somehow that got removed without me realizing it-so thanks for letting me know!

Amyriln-Good to know! I always think those portion sizes are pretty bogus.
