What would you Do?

What would you do with a bunch of apples starting to wrinkle and get spots?

Me? I’d peel, chop and then Cooke them down on the stove to make some filling for my oatmeal fruit bars.

I don’t have a blog, but what do you do with a bumper crop of watermelons? We are a family of three…help! :0

They get turned into slow cooker applesauce. Recently, I had some pie dough in the freezer, so I chopped them up and made apple turnovers.

They also can be turned into slow cooker apple butter. Yum!

Depends how many apples, but I can think of so many things! Applesauce, apple butter, apple pie, apple turnovers, apple crisp, apple pancakes, apple muffins… I’d better stop because I’m making myself hungry. :-P

I agree with Catherine, my first thoughts would be make apple cinnamon muffins, apple cake(yum), dehydrate them and make apple wreaths for X-mas,make apple butter for another homemade gift, I love apples I could go on and on…….

I’d pull out the crock pot and make apple butter. I made my first homemade batch last year and I’ll never buy it from a store again!

If you don’t have that many apples then a small batch of applesauce would be great. Freezes wonderfully,too.

I would peel the apples, leave them whole, cover with pie dough and bake. Delicious!!!!

I Thank You. I never thought of filling for Granola or Breakfast bars. Have made many qts. of applesause, made apple butter. Even used the pressure cooker and made qts. of apple pie filling. That was super handy.

I would make apple crisp or coffee cake. Either will be baked, so it hides the rubberiness of wrinkly apples. Coffee cake reipes with apples usually put down the first layer of batter, a layer of apples, sprinkle with your streusel topping, another layer of batter, and the final layer of streusel.

Both of these are actually my Mom’s strategies, to give credit where credit is due!

For the gal with too much watermelon: my ideas are

- Sorbet (might keep ’til winter, when you’re no longer sick of it!)
- A canning class I went to last month, the teacher made pickled watermelon rind and added cherry juice, used that as sweet and sour sauce. Her family is a huge fan of sweet and sour sauce, and she did it to use up a bounty of tart cherries.
- Give ‘em away

I haven’t written this into a blog post (and won’t have time for a couple of days, but I make these (and you should too) because they are SO good.

Caramel Apple Bars

1 cup packed brown sugar
1/2 cup butter or margarine, softened
1/4 cup shortening
1 3/4 cups Gold Medal® all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon salt
1/2 teaspoon baking soda
4 1/2 cups coarsely chopped peeled tart apples (3 medium)
3 tablespoons Gold Medal® all-purpose flour
1 bag (14 ounces) caramels

Heat oven to 400ºF. Mix brown sugar, butter and shortening in large bowl. Stir in 1 3/4 cups flour, the oats, salt and baking soda. Reserve 2 cups oat mixture; press remaining oat mixture in ungreased rectangular pan, 13x9x2 inches. Toss apples and 3 tablespoons flour; spread over mixture in pan. Heat caramels over low heat, stirring occasionally, until melted; pour evenly over apples. Sprinkle with reserved oat mixture; press lightly. Bake 25 to 30 minutes or until topping is golden brown and apples are tender. For 36 bars, cut into 6 rows by 6 rows while warm. Store covered in refrigerator.

APPLE PIE FILLING

I had some pretty sad looking apples in the fruit basket, so through them in the crockpot and voila, a yummy pie filling similar to McDonalds.

Recipe…

12 apples, peeled, and diced
1 cup brown sugar
1 teaspoon each of cinnamon and nutmeg
1/4 teaspoon of salt
1 cup of water

Mix in crock, leave to cook about 5 hours until apples are tender. Then combine…

1 1/2 tablespoons cornflour
1/2 teaspoon citric acid or squeeze of lemon juice
1 teaspoon vanilla
1-2 tablespoons water to mix

Turn the crockpot to HI, and stir through the above combined. Leave til thickened..about 30 minutes.

If you like, mash the apples a bit with a potato masher.

ENJOY as you would, in a pie, danish, crumble etc. Or with rice pudding..yum, that would be nice.

I also use as a filling in tortillas, roll up as a chimichanga, deep fry and dust with icing sugar.
