Menu April 28th

Welcome to this week’s menu. I have to say – joining in on “Menu Plan Monday” hosted by Organizing Junkie has really helped me to think ahead, use up my leftovers and pantry stockpile, and have more of a variety in our meals!

Monday: Sandwiches

Yankee Bill is out on Monday nights, so the kiddos and I used the free Redbox code and got out “Enchanted”. I threw the picnic blanket on the floor and made simple sandwiches. The kiddos told me “this was the best night ever” because they got to eat in the den on the floor!

Tuesday: Enchilada Casserole

I have about 2 cups of leftover taco groundbeef/tvp mix. I’ve got tortillas in the freezer, and enchilada sauce I bought last year on sale. I’ll add in the leftover onions and green peppers I took home from the sub sandwich platter we had at our church retreat on Sat, and I’ll have a nice casserole.

Wednesday: Tuna “Hot Pockets”, Salad

Homemade bread dough from the breadmaker, a fairly dry tuna salad (to keep it from getting soggy) and a bit of cheese. I’ll make them up early in the day, then for supper I’ll just have to toss them in the oven. This is my “fish” meal for the week.

Thursday: Venison Steaks w/ Caramelized Red Onions, Sweet Potato Oven Fries, Frozen Veggies

The venison is from hunting season-free meat, if you don’t take into account all the costs associated with outfitting a guy for hunting! Anyway, if the weather is nice, we’ll pop the steaks into foil packets with the onions and grill them. If not, they will be pan fried, and the onions (still left over from the sub tray) will be cooked separately. I bought a 1/2 bushel of sweet potatoes at a local farm that has a huge vegetable stand (shipped in-not local grown at this time of year!) and will make Hillbilly Housewife’s oven fries.

Friday: Pizza

Yes. Again. Let’s not fight it.

Saturday: Curry or Fried Rice

I’ll make one or the other in order to use up all the little bits and pieces leftover for the week. The Fried Rice is a stand-alone. Curry needs rice to go along with.

Sunday-Spinach Cheese Quiche & Veggies

Trying to fit in that one meatless meal a week. Eggs, although they have gone up in price a great deal, are still a pretty inexpensive protein source. I have boxed frozen spinach in the freezer, and keep shredded cheese in the fridge all the time.

Sounds good!

We’ve been doing a weekly pizza night lately too. I’m no good at making my own, so I buy frozen. Hey, it’s still cheaper than eating out, right?
