This is week is another “short” week as far as menu planning goes-due to my trip to Bentonville. I leave on Wednesday night. Yankee Bill prefers to either eat out or use very basic frozen food while I’m gone, so there isn’t much to preplan for Tues-Sat.
Monday: Spaghetti w/Venison Sausage Meatsauce & Greenbeans
Was able to use up some more venison this weekend, but still have way too much in the freezer. Hunting season starts on th 15th of November, I’ve got to make room!! I used some of the venison sausage for biscuits and gravy on Sat, but there is plenty left so I’ll toss it in with some jarred sauce, sauteed onions etc for a nice spaghetti meal.
Tuesday: Venison Stew & Bread
More venison! I defrosted what I though were steaks, but it’s the tougher meat we had earmarked for jerky (which never happened) I figure cutting it small and then a long slow cook in the crockpot should make it tender enough. I’ll probably use a V8 type base for the stew-I’ve got a large can I bought this summer planning on making Gazpacho (which never happened). I’ll add in the usual suspects-onions, veggies from the crisper etc. I may even toss in some of the cabbage from the garden.
Wednesday: Crock Pot Mac’n Cheese
I can set this up to go in the crockpot and then it will be ready for them to eat even though I’ll be out the door. From experience I know this is a dish where Yankee Bill will actually be likely to use the leftovers during the time period that I’m gone.
