I’ve got several goals with my menu plan this week. I’m trying to get back on track with my goal of having both a vegetarian meal and a fish/seafood meal once a week. I’ve also rejoined Weight Watchers (online) and am trying to make my meals a bit more calorie friendly. Luckily I don’t have very many evening plans to work around this week-the calendar is pretty clear for now.
Monday: Turkey & Gravy over toast with Chard.
I have some leftover turkey that I will combine with a packet of gravy (nowhere near as good as homemade-but beggars can’t be choosers). Add the homemade bread that I’m making today and some Chard out of the garden (despite several frosts!) and we’ve got a great homemade comfort meal!
Tuesday: Crockpot Salsa Chicken, Rice & Salad
Since I’ve got a date with a local news crew Tuesday morning (yay!) I want a meal that will cook without supervision. The chicken will be shredded & served with warm tortillas, rice on the side and the burrito/salad fixings can either be tossed in the tortilla or used as a make-your-own salad on the side.
Wednesday: Lentil Casserole, Mashed Potatoes & Chard
The lentil casserole is filling and cheap-plus I can package & freeze it in portions for calorie friendly yet filling lunches for me later! The potatoes will use up some lonely wrinkly ones down in the basement and the Beets are still out in the garden. This is my Vegetarian meal for the week.
Thursday: Teriyaki Shrimp Stirfry over Rice
I picked up some shrimp at Aldi’s last week for a reasonable price. I’ll marinate them briefly in teriyaki then I’ll add them to sauteed veggies for a stirfry.
Friday: Pizza & Roasted Broccoli
Using the Pizza Hut Crust Clone recipe. The broccoli is simply cut into florets, sprinkled w/lemon pepper and roasted in a 425 oven for about 20 minute. Yum.
Saturday: Mac ‘n Cheese. From a box.
It’s Halloween, so let’s face it-the kids are going to be so jazzed up that I’ll be lucky to get them to eat ANYTHING that isn’t pure sugar before we head out trick o treating. So why try? We’ll head over to my friend’s house after to do some cheese & crackers for the grownups and sugar overload for the kiddos.
Sunday: Chili & Cornbread
As the days get cooler, chili just sounds so good! I’ll be using some of the spicy venison sausage-since the heat will get spread out a bit in the sauce etc. Beans will be dried that I soaked overnight with water & cooked. I’ll probably do a double batch & freeze some in 1 cup portions for later.

LOL. We have two items in common this week–the pizza and the stir fry! The crockpot salsa chicken sounds good! I’ll have to try it next week.
Yum! Chili and cornbread sound wonderful for a gray Seattle day. Slowly getting inspired…
Nothing wrong with chili. Or mac ‘n cheese.
You should try adding bread crumbs to your mac ‘n cheese. Adds a nice texture, and if you add some ketchup, it’s divine.
(I only do this with cheap M&C, BTW. I’m a purist.)
