Menu Plan 11-23

by Jenn @ Frugal Upstate on November 24, 2008

Ah, last week was chaos, and with no menu plan I was scrambling around every night trying to figure out what to feed the family. Every time I skip making a menu plan I really live to regret it!!

Monday: Chicken Stirfry and Rice

We had baked chicken for dinner on Sunday and there is a lot left. Combine some of the meat with a bag of stirfry veggies and some soy sauce, spices etc, add the leftover rice from the fridge. Bingo! We are in business.

Tuesday: Venison Roast, Fried Potatoes, Green Beans.

I’ve got one from last year totally defrosted in the fridge. I’ll cook it in the slow cooker with tomato sauce and some leftover red wine. I’m going to cook up some potatoes, some of them will then be fried with some onions, the rest will be made into mashed potatoes to use on Wed.

Wednesday: Chicken Pot Pie with Mashed Potato Crust

There will still be some chicken left from Monday’s dinner as well-I need to use it up before Thursday. A pot pie will have enough of a different taste from the Thanksgiving Turkey Feast. . . . But will use up the leftover gravy and chicken. I need to make room in the fridge because I know my sweet MIL will be sending me home with leftovers!

Thursday: Thanksgiving Dinner at my MIL’s house

I was asked to bring the scalloped oysters. Never made it before, but I’m sure with the help of good ‘ol Betty Crocker I can figure it out :)

Friday: Pizza

Should be a good change of pace, plus we have skipped pizza for the last 2 weeks (which is a crime)

Saturday: Thanksgiving Leftovers

The composition of this meal will depend on what MIL sends home with us :)

Sunday: Soy/Mushroom Fish Filets, Rice & Broccoli

Just for something completely different.

Comment about Frugal Vegetarian Menu Plan 11/3/-11/9:Sunday Plan!Dinner: Vegetarian Salad with Chik’n Strips and French Onion Bread. There’s a printable coupon here for 50ยข off one Fresh Express Tender Leaf Salad. I’m not sure how long the coupon will be available, I print them when I come across them.Dessert: Chocolate Strawberries from allrecipes.com
Frugal Tip:
Instead of slathering on too much oil, use an oil sprayer.
I found this simple and practical oil sprayer on Amazon’s site, so I no longer buy the expensive aerosol can sprayers.
