Monday: Shepard’s Pie & Homemade Bread
This was made with some precooked ground meat I discovered in the bowels of the freezer. It was a tad bit freezer burned, but with the gravy around it, you couldn’t tell. I cooked up potatoes I had in the bin for the mashed topping, and used canned peas, raw carrots (boiled) and onion in the pie itself.
Tuesday: Homemade Pizza and Salad
I have two crusts that I made a few weeks back, as well as pepperoni in the freezer. With some jarred spaghetti sauce and shredded cheese I’m in business. I have salad fixings already in the fridge.
Wednesday: Spicy Thai Noodles & Stirfried Veggies
I made a double batch of the sauce 2 weeks ago (I was taking it to a pot luck) and put the extra in the fridge. I have tons of sale pasta in the cupboard. I may cook up a single chicken breast and chunk it up in there for extra protien (the sauce has peanut butter, so there is already some). I’ll use a bag of frozen stirfry veggies, maybe add some onion to it.
Thursday: Baked Chicken, Rice & Veggies
I bought the whole chicken cheap and threw it in the freezer a month or so ago. It’s been defrosting for a couple of days. I buy my rice in bulk so there is plenty of that. I’ll have enough leftovers from the chicken for another meal and soup.
Friday: Going out with friends. Kiddos get leftovers from the rest of the week.
Saturday: Chicken stirfry or Curry, Rice
I’ll use the leftover chicken and rice from Thursday.
Sunday: Chili and Homemade Bread or Hotdogs
We are having folks over for the Superbowl. Chili is a great way to cook up a meal for a crowd-using dried beans and ground venison I have on hand, it will be very inexpensive. Using the breadmaker to do the dough, I can make a couple of loaves of fresh bread easy. My girlfriend will bring some game time munchies, and we’ll have hotdogs (from Aldi’s and kept on stock in my freezer) for the kiddos who don’t do beans.
So that’s it for the week! It will be interesting to see how close I can stick to the plan.

Great job on your menu plan! It all sounds so yummy. I need to work on mine for next month. I am trying to do it monthly so I only have to sit down and do it once. It is a huge undertaking, but saves me a lot of time

I’m actually really good at menu planning. I have a little white board on my fridge, and on Sunday I pull out all my freezer ingredients to thaw.
I’ll write down all the meals I can make out of what’s on hand on the white board to include the freezer meats. Easy peasy!
I’ve never had shepherd’s pie and will be adding it to my menu this month. I hope that it tastes as good as it sounds.
