You know how I like to say that a menu plan is a plan-and that it is flexible? Well, last weeks menu plan went south on Friday and the entire weekend had to be totally reworke. It started when suddenly I realized that I hadn’t started the pizza dough until WAY to late on Friday night. Oops! it takes 1hr 20 min to cycle through the bread machine, then takes another 10 min to parbake the crust (X2 for each crust) then you “decorate” & bake another 12 min. That’s about 2 hrs start to finish!
An emergency trip to the cellar freezer revealed a package of polish sausage. Sauteed with some onion I had a main dish! Added instant potatoes and green beans for a whole supper.
So I made Friday’s pizza on Saturday night (instead of the Pastisio), then Sunday totally forgot to start the baked beans. Dug some chicken out of the freezer & baked it for dinner. Served it with leftover rice & veggies.
As they say, the best laid plans of mice & men. . . Hopefully this life will go a little smoother.
Monday: This & That Curry with rice.
A great way to use up lots of little bits of leftovers from the fridge. And let me tell you, there seem to be a lot of leftovers in the fridge!
Tuesday: Local Steak Dinner Fundraiser
I don’t have to cook, get a night out with Yankee Bill & the kids can enjoy fishsticks. Life is good.
Wednesday: Chicken ‘n Biscuits.
I baked up extra chicken on Sunday, so I’ll use the that and some chicken broth to make a lovely thick chickeny gravy with veggies to serve over (or with) biscuits.
Thursday: Baked Beans & Cornbread or PB&J
I’ll make the homemade baked beans I forgot to make last Sunday. Buddy still doesn’t like beans, so he can have a sandwich (mama isn’t a short order cook)
Friday: Pizza
Of course! I use the Pizza Hut Clone Crust recipe.
Saturday: Bacon Wrapped Scallops, Risotto & Sicilian Salad
I decided that for Valentines day this year I’d feed the kids something quick and easy, and then Yankee Bill and I would have a special meal after the kiddos head to bed. He loves scallops, so I thought that would be a nice treat (way more expensive than our usual meals, but cheaper than a babysitter & a dinner out!). My pals on twitter encouraged me to try Risotto for a side dish. For desert I’m making the Coffee Mousse. Mmmm.
Sunday: Pastisio & Greek Green Beans
Since I didn’t get around to it last week.
