Here we go again! I stuck to last week all the way to Thursday before it sort of fell apart :) Then we wound up having folks over for the Super Bowl last night (kicked them all out at half time so the kiddos could go to bed) and I made two big crockpots of chili-White Chicken Chili and Venison Chilli.

Menu Plan

Monday-Chicken Soup & Rolls

Made from the carcass of the roasted chicken, with a bunch of veggie odds and ends from the fridge thrown in. The rolls were free from the food pantry-they offer free bread to the whole community on Thursdays-donated from the local store’s bakeries. Since I worked on Thurs at the food pantry I picked some up. I used a bunch with the chili yesterday, but there is plenty left over to go with soup.

Tues-Pancakes et al.

Shrove Tuesday, so we’ll be going to the church pancake supper.

Wed-Hamburger Rice Casserole

I have hamburger/TVP mix that was left over from my defrosting it last week for the shepard’s pie. Then I have the leftovers from a huge pot of rice I made yesterday to go with the chili as well. So Hamburger Rice Casserole seems like a no brainer.

Thurs-Ginger Soy Fish, Canned Greens, Carrots & Rice or Pasta

I’ve made a vow to eat more fish. The canned southern seasoned greens are yummy and were bought on sale. Carrots will be from the 2 lb bag I bought. If there is rice still left, I’ll use that-otherwise I have plenty of pasta in the cupboard.

Fri-Chicken Stuffing Casserole, Cranberry Orange Relish, Frozen Veggie TBD.

There is still some of the chicken left from the roasted chicken-I served it with gravy over toast for lunch on Sunday. So the chicken and gravy, any leftover rolls, some venison sausage etc will make a nice casserole. The Relish is from Thanksgiving when i make a big batch of it and freeze it in zippered baggies.

Sat-Homemade Pizza, Pickles and Salad

Yummy!! I am making up meals with discount supplies and with what I have to not splurge. It is so creative and frugal fun too. Annette
