Menu Plan 3/2

This is down and dirty quick-busy day today, gotta head right out and hit the gym if it is EVER going to happen.

Monday: Lentil Ham Soup with Homemade Bread

There is still leftover lentil casserole. I will smush it up with chicken broth, extra carrots and onion, and throw in some chunked ham. Serve with homemade Bread

Tuesday: Roast Chicken, Rice & Frozen Veggies

I bought a roasting chicken at the store this weekend, I’ll roast it up and serve it with rice. The best thing about making homemade roast chicken is the homemade gravy to go with it. Mmmm.

Wednesday: Fried Ham Slices, Winter Squash & cornbread

I bought a small ham to make “Green Eggs & Ham” for breakfast on Monday. It was in honor of Dr. Suess’s birthday. There is plenty left, and what could be easier than warming and browning the slices up in my cast iron skillet. The winter squash is already mashed & frozen from this fall, and I can whip up a batch of cornbread in nothing flat. Hmm, maybe some collard greens would go well with that as well. . .

Thursday: Chicken Pot Pie

From the meat left over from Tuesday’s chicken. I think I’ll actually tackle a real crust-I haven’t done that in a while (instead of shepards pie style with potatoes). If I’m feeling really froggy I may use my large muffin pan (the ones that are the size of those huge muffins you buy at the store) and make individual pot pies. We shall see.

Friday: Pizza & Roasted Broccoli

I think Princess is over her very brief “I don’t feel like Pizza” stage. So homemade pizza is back on the menu

Saturday: Homemade Sushi

Princess asked if she could pick a meal and we could make it together. Of course I said yes, who would refuse to teach their inquisitive 7 year old how to cook. So what does she pick? Her favorite food of course, Sushi. I have the seaweed and rice on hand, I think I even have the sweet mirin & the rice vinegar for the rice dressing. . . I will have to pick up some avocado, fresh cucumber etc for the rolls. When we make them at home (which I haven’t done in about 2 years) I only do veggie and crab legs. I don’t really trust the local fish, plus sushi grade tuna is extremely expensive.

Sunday: Dinner out for Great Nana’s 91st Birthday.

It’s an annual tradition. We drive the hour to Oneonta and the rest of the family drives in from points north and west. .. so it’s sort of a birthday and family reunion all rolled into one.

Hey Jenn!

Pioneer woman has been doing a great sushi tutorial on the cooking part of her blog lately. Since you haven’t made sushi in a few years, it might be cool see what she learned from the sushi chef that came to her house to teach a class. Plus, the pictures will make you hungry lol! Hope princess enjoys sushi night!

I always enjoy looking at your menu. I used rhubarb this past weekend that I had chunked up and frozen last summer. Isn’t it such a nice feeling when you pull something out of your freezer that you put in from your own garden? You get that nice feeling of accomplishment twice, when you fill your freezer and when you empty it!

I love the idea of Green Eggs & Ham for Dr. Seuss birthday. The preschool class did it this week.
