Monday: Tacos, Refried Beans and Rice
Princess LOVES Mexican food (almost as much as she likes Sushi) so I figured I’d make her a happy girl and have tacos. I always buy a few boxes of shells on sale when I see them-so those are in the cupboard. I had some ground beef that was starting to get gray, so I cooked it up this weekend-I’ll add the spices and some water and let it simmer for a bit. The beans will come from a can, and the rice will be fake “spanish rice” aka-cooked with tomato sauce
Tuesday: Chicken Soup & Biscuits
There is chicken and broth left from the roast chicken last week-so I’ll set it to simmer in the morning. Biscuits will be whipped up just before the meal.
Wednesday: Ginger Fish, Broccoli & Rice
Thursday: Macaroni & Cheese with a tossed salad.
I’ll use the All Day Macaroni & Cheese recipe!
Friday: Taking Princess & I Out for both of our Birthdays.
OK-Princess will be going to the Japanese Hibachi Steakhouse with us for dinner. Not a frugal night, but oh so fun for her. We’ve done this for the last 2 years-she especially likes it when the chef makes an onion volcano and lights it on fire. Good times!

There was a coupon for the “Japanese Hibachi” place in yesterday’s paper, I’m pretty sure it was $10 off two dinners-might be worth finding a copy of the paper for!

I am a new reader to Frugal Upstate, but I found you via Frugal Coast to Coast and Being Frugal.
Since Princess enjoys Mexican food (as I do), I thought I’d share my tip for making Spanish Rice. I make my own picante sauce (salsa) from scratch, because it’s cheaper than buying it bottled. I just cook my rice, then add picante sauce to it. Voila!
