School starts tomorrow for the kiddos, along with all the changes in my life and schedule that go along with it! Now more than ever I will need to stay organized-and I’ve found that having a menu plan is the first step towards feeling like I have my day under control!
Monday-Already Long Gone!
We went to a BBQ with friends and watched the fireworks. Tons of people. Tons of food. Life was good.
Tuesday-Chicken Soup & Biscuits
Soup is such a great way to use up lots of bits and pieces of leftovers-and there has been a nip of chill in the air in the evenings that make soup sound good. I’ve got some chicken left from grilling on Sat.(even with using some in the Crunchy Asian Chicken Salad for the BBQ yesterday), there is leftover rice from Chinese takeout (nana bought that) and some bits and bobs of veggies left in the crisper. I’ll throw everything along with water (uh-obviously) and bullion into the crockpot and let the flavors simmer and meld all day. Then right before supper I can whip up some biscuits.
Wednesday- Tuna Patties, Rice, Roasted Green Beans
Tuna patties are my adaptation of my salmon patties recipe. Tuna is cheaper than salmon and thus the substitution. I do pan fry these in some oil (sooooo good) and then make up packaged hollandaise sauce with some creole seasoning mixed in to go over them. The beans are from the garden-just sprayed w/oil, sprinkled w/salt & pepper and roasted at 425 for 30 min or so. Yum. Rice is just plain white rice-I buy the big 25lb bags at the asian food store.
Thursday-Quiche & Salad
I’m trying to get back into my habit of including one meatless dish per week as well. Quiche is a tasty, economical meal, as long as you don’t go nuts with the cheese. I should have some leftover meats and veggies by the end of the week that could be used in the quiche. There are still tomatoes and beans coming in from the garden, a bit of lettuce and some herbs (lovage, chives, parsley, basil-all from my herb container garden) will make a lovely salad to go with.
Friday- Homemade Pizza
As usual.
Saturday-Bratwurst, Homemade Rolls, Marinated Green Beans
We bought some nice brats (real German style ones) a couple of weeks ago. Yes-they are vacuum sealed, so no health worries. I’ll make some rolls (I do the dough in the bread machine) and we’ll cook some green beans from the garden and marinate them in some Italian dressing, probably with some herbs etc thrown in.
Sunday-Venison Steaks, Fried Green Tomatoes, Boiled Potatoes & Gravy
I told you all last week you’d be seeing lots more venison as I try to clear some space out in the freezer for this hunting season’s bounty. Potatoes are store bought and the gravy is from those little packets (just brown gravy mixed w/any drippings there are from the venison). The green tomatoes are from the garden. I’ve got plenty of green, not so many red. . .
