Menu Plan 9-22

Well, I’m back from Blog World Expo and exhausted!

But here we go with the menu plan for the week:

Monday: Breakfast for dinner-scrambled eggs, venison sausage, toast & fruit.

Talk about an easy meal. I don’t think I’m up for more than that after being gone to Blog World Expo and getting back at the small hours of the morning this morning.

Tuesday: Chili & Cornbread

The weather is cooler, I’ll have time to soak the beans on Monday, I’m covered up in fresh tomatoes still and I’ve got some browned up ground beef in the freezer I have to use. Perfect.

Wednesday:Manicotti, Salad and Bread

I just found a box of Manicotti shells in the cupboard. I figure I better use those up! I don’t have a recipe, will just create a filling from cottage cheese, shredded mozzarella, parmesean and herbs, then throw some spaghetti sauce over it. I’m easy.

Thursday: Venison Steaks, Mashed Potato and Green Beans

There is no way I’m going to get through all this venison before hunting season hits us again. But I’m trying.

Friday: Homemade Pizza

Nach.

Saturday: Venison “This and That” Curry with Rice

Just another “use up the leftovers” type of meal. I once described how I make my “This and That Curry“.

Sunday: Chicken Divan, Sauteed Squash and Rice

I’ve got 3 pks of chicken I need to use up in the freezer, I’ll cook it all then use some in the Divan recipe-the rest you’ll see next week!

Hi Jenn,

Does pasta really have a shelf-life? I have a package of lasagna and the expiration date was like 6 months ago. Does pasta go bad or is it just something that the manufacturers want us to believe?

I sure hope one or more of my “boys” gets a deer this year. I love having venison!

Hi, new reader here! I really need to start planning my meals better again. What with back to school and back to work, we’ve been so busy we haven’t been doing very well with meals.

T’Pol-I’m not sure what the official answer on that one is. I know that personally I have used pasta that was well over a year old. It was inside my comfort level to ignore the expiration date-you’ll have to decided for yourself ;)

rmlrhonda-venison is yummy! Hope they have good luck, for your sake.

Kathleen-Menu planning really does relieve a lot of stress. Try it next week and see how it goes.
