Menu Plan-March 30th

Writing out a menu plan has really been helping me keep on track-I’ve been doing well on using up what’s in the fridge and not wasting it. It has also helped me with the “What in the heck should I make for dinner” panic at about 3pm.

Monday: This and That Curry with Rice.

I’ve got a bunch of leftovers-none of which is enough to do anything on it’s own. I’ve also got some veggies languishing in the crisper drawer. Mix it all together, add in some curry cubes and liquid. tada! Curry!

Tuesday: Chicken Soup and Biscuits.

Sticking with last weeks plan I make a whole roasted chicken for dinner on Sunday night. Of course the carcass went into the crockpot overnight to make soup stock. That, and some of the veggies from the fridge are the basis for the soup. We had a potluck for church on Sunday and I made a giant batch of biscuits-if they don’t all get eaten for snacks and breakfasts they will be the accompaniment. If not I’ll throw a loaf of bread into the breadmaker.

Wednesday: Lasagna

I’ve got plenty of lasagna noodles in the cupboard, and ground venison in the freezer! Rather than buying ricotta cheese I usually just use cottage cheese-honestly, but the time I add an egg, Parmesan cheese and herbs to it, I can’t tell the difference anyway! I’ll probably make a double batch and freeze one for later. You never know when a frozen meal will come in handy!

Thursday: Tuna Casserole.

Speaking of which, I have a tuna casserole in the freezer. Since I have a meeting on Thurday night, and have to jet out of the house at exactly 6:30, being able to serve dinner quickly and easily is a good thing. I made a large tuna casserole when YB was out of town a couple of weeks back and froze what the kiddos and I didn’t eat (which was quite a bit). I’ll stretch it out with veggies and bread. If it really looks smaller than what I remember, I can always add in more noodles and sauce.

Friday: Pizza Night

I’m going to cheat on this one. When I was going through the cupboard I found some of those “pizza crust mix” packages. I don’t have any clue when I bought them, and they aren’t as nice as my homemade crust, but since I paid for them at some point I might as well use them up!

Saturday: Nothing, none of us will be home for dinner.

Sunday: Not sure.

We may be going out that night. If not, I’ll have to come up with something brilliant. . . .

Looks like a yummy week! I’ve got some frozen tuna noodle casserole too. I think I’ll have to pull it out some time next week.

For some reason, my hubby doesn’t like ricotta cheese, so I always use cottage cheese in my lasagna.

It’s on my menu this week, too!

looks like a yummy week at your house. I think I’ll stop by on Weds. for dinner as I am the only one in my family that likes lasagna! :)

Love the name of Monday’s dinner! Let us know how it turns out.

And thanks for popping by my blog – the risotto turned out VERY yummy, though both me and DH’s stomachs are hurting a bit. Maybe it’s the rice expanding. ;)

I also use cottage cheese instead of ricotta – much better on the hips.

The curry turned out well-it is one of my standard “Use up your leftover” meals :)

Mrs W-I like to buy the premade curry cubes like “Vermont Curry” or “Golden Curry” from the international aisle of the grocery store (or your international market)

Huh! I have never, ever seen that before. Now I can be on the lookout… I usually just use curry powder + my own added spices. But I love finding new products–thanks for clarifying! Looking forward to the tutorial.

PS to Annie Jones–my husband doesn’t like ricotta, either. He calles it “woofie cheese,” because *he says* it makes a “fffft” sound when you slice into it in lasagne… hehe… just wanted you to know you’re not alone!
