I have to admit, I did pretty good this week on the menu plan with 2 exceptions. On Friday my lovely MIL called and said that she had, and I quote “enough food left over to feed an Army” from a luncheon she had hosted at her home. So we went over and had a lovely seafood quiche, jello salad, bread, etc. Then yesterday we decided rather spontaneously to go out for dinner as a family in honor of Father’s Day. We rarely do that, so it was an unexpected treat. Now to this week.
Monday: Boxed Mac’n Cheese with hotdogs, green beans.
I go to my weight loss meetings every Monday, so I never get to eat with the family (eating before weighing in is bad for your morale). Usually I sit there and everyone eats together as a family, but tonight YB will be going straight to an activity after work. So I’m taking the easy way out and feeding the kiddos a box of Mac’n Cheese with the 3 leftover hotdogs I have in the fridge cut up in it. I’ll have a salad and some of the leftover mac when I get home.
Tuesday: Fish Packets, Rice, & Grilled Veggies
I’m going to try this new recipe for Carribean Fish in a Packet. I’ll use some of the bagged frozen peppers in place of the red pepper, and the frozen fish from Aldi’s I keep stashed in the freezer. Rice from the bulk bag (Asian food store) and then I’ll probably splurge and hit the grocery for a summer squash to grill. Can’t wait till my own come in. . . in about 2 months. Sigh. This takes care of the fish that I am trying to work into our diet once a week. I feel a bit guilty though, I should be trying to make something with Tuna in honor of the Frugal Food Series: Tuna.
Wednesday: Tacos, Rice, Canned Refried Beans
I’ve got some TVP/Meat mix in the freezer that I really have to use up. Tacos are a perfect way to use TVP as the taco spice provides so much flavor. I have tomatoes & lettuce etc on hand. I may have to get some sour cream, or we could go without. For the rice I’ll just rewarm some from Tuesday with a few spices and tomato sauce.
Thursday: Homemade Baked Beans (Crockpot), Bread & Salad.
Out and about during the day on Thurs, and then have a church meeting from 6-9. Crockpot is the way to go on those days. I’ll have to soak the beans on Wednesday night, but then it’s just a quick throw together in the pot. Bread will be made on Monday (2 loaves each week) and the Salad I can whip up in no time.
Friday: Eat at church function
My lovely MIL volunteers at a local community supper every Friday. Anyone is welcome, there is no charge, just a free will donation. Their numbers have been down (which effects funding) so I told her the kiddos and I would come eat.
Saturday: Dinner and a Movie, kiddos eat pirogies and frozen veggies.
Yes, time out for us! We actually haven’t firmed up exactly what we are going to do-but I think the new Indiana Jones movie is on the agenda.
Sunday: Pizza & Salad
Homemade.
