Harper-I may have to find that book just to see the crust recipe. I didn't realize that there was a followup book to the Moosewood Inn. Guess I'll have to put in a library request for it :)

Another great quiche resource is the Enchanted Broccoli Forest (brought to you by Moosewood Inn). She has great instructions, and explains how to vary them. My favorite part though, is her mashed potato crust. It's a great way to use up leftovers, or just that wrinkly potato at the bottom of the bag that would otherwise go bad.

joanna-you mix the rice crust ingredients, pat them into the pan, then bake just that at 425 for 15 minutes or so. That firms it up. Then you put everything else on top and cook as usual. Of course you could just make a regular pastry crust, but this uses up leftover rice and to me is easier.

starcrossed-I've never tried that. It does sound yummy.

I also like to throw in a wild rice mix in the quiche itself to act as a binder-- and while it makes it dense and not the typical fluffy quiche, it's very delicious :)

I've never made a rice crust... I assume the 2 cups of rice is cooked when you pat it in the pan?
