Recipe: Homemade Almond Biscotti

Making homemade almond biscotti is easy, delicious and much, much cheaper than buying them in the store.  Biscotti also make a great gift!

Homemade Almond Biscotti

Ingredients

  • 2 1/2 C Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 1/2 C Sugar
  • 2 Eggs
  • 1/2 C Butter
  • 1 tsp Almond Extract

Instructions

  • Combine flour, baking powder and salt in a bowl and wisk until combined
  • In a mixer, beat sugar, softened butter, eggs and almond extract until well blended.
  • Slowly add in flour mixture-the resulting batter will be very stiff.
  • Divide dough in half and shape into a 2 1/2" x 9 1/2", 1/2" loaf.
  • Bake in 350 oven until brown-about 35 minutes.
  • Cool for 10 minutes on a rack.
  • Cut into 1/2" thick slices with a serrated knife.
  • Arrange slices, cut side down, on a baking sheet. Bake 10 minutes at 350 degrees, turn slices over and bake another 5 minutes.
  • Variations:
  • Use vanilla extract instead of almond.
  • Mix 1/2 C mini chocolate chips into the dough.
  • Drizzle completed biscotti with melted chocolate.

Love that you showed how easy and simple it is to make Biscotti at home. Like you, I have no idea why they charge so much for it in the stores or at coffee shops. I’ve made chocolate biscotti in the past, I’m hoping I have some almond extract on hand so I can try your recipe out this weekend.

FYI, You forgot the amount of eggs but since I watched the video first, I know it’s two.
