Homemade Eggless Eggnog Recipe-A Frugal Alternative!

After my post on Eggnog Lattes, many readers commented on the high price of storebought eggnog-here is a more frugal alternativie. A girlfriend gave me this recipe-she found it in a women’s magazine.

It was a pretty good facsimile-although not as thick and creamy as the store bought stuff. When I reread the recipe, I realized I had made it wrong (hello Jenn, READ THE DIRECTIONS)-I mixed everything together at once instead of making the pudding first with a single cup of milk. Next time I make it the correct way and see how it goes, if that doesn’t work I’ll cut the milk back to 6 cups and see if that improves the texture.

Homemade Eggless Eggnog

8 Cups Milk
1 Pk Instant French Vanilla Pudding
1/2 Cup Sugar
2 tsp Vanilla

Together the pudding with 1 cup of milk and let it thicken. Once thick mix in the rest of the ingredients. Keep chilled.

Variations:

Add 2 tsp of Rum extract for authentic flavor without the alcohol or calories
Go whole hog and add a shot of rum
Sprinkle nutmeg on top
Go low-cal with skim milk, sugar free fat free pudding, and splenda (or alternative)
Go Vegetarian/Vegan with Soy/Rice milk and vegan/vegetarian pudding
Go cheap with powdered milk (the sugar and added flavors should hide the “powdered milk” taste)

So funny you posted this–we had an open house this past Saturday and I made a sugar-free version of this for my diabetic friends (using SF pudding mix + SF vanilla soymilk, and a little milk to thicken… pudding won’t thicken with just soymilk). It really was good!

Thanks Jenn, We made the recipe this afternoon and we say it is pretty good. It’s all gone. The cost: 4.90 a gallon to make as opposed to 6.75 for the store bought Aldi version.

Mrs. W-Thanks for the tip on the soymilk. I wonder if vegetarian/vegan pudding would thicken up without the regular milk. They must have taken the soy/rice milk problem into consideration.

You know, I’ve never seen vegan pudding mix–and so I didn’t know it existed! :) I would think it would indeed work with soy/rice milk, in that case.

It’s the smaller box of pudding mix. . . sorry I don’t remember how many oz that is.
