Pink Velvet Whoopie Pies

Here’s a great little (and I mean mini) sweet treat that’s perfect for Valentines Day–or any day!

Pink Velvet Whoopie Pies!  I grew up with Whoopie pies in Maine and didn’t realize that they were unique to New England until I was an adult (alth0ugh now they are found more and more across the country).  The traditional Whoopie Pie is chocolate with vanilla filling–but for Valentines Day when Walmart asked me to get creative with Duncan Hines new Pink Velvet Cake mix so I decided to create Pink Velvet Whoopie Pies!

I decided to make mini pies–about the size of a half dollar–and for extra Valentines sparkle I used some heart shaped sprinkles!  These would look sweet with standard “jimmies” or a pretty colored sanding sugar as well.

To create the little cakes you mix cake batter with pudding mix, water, oil and extra egg–then you use a gallon zippered freezer bag as a really big pastry bag and pipe the batter out in little rounds to be baked.  Be careful to leave plenty of room around each dollop of batter–at least an inch all the way around–so you will have pretty edges.  If they touch you’ll have to pull or cut them apart and it won’t look any where near as nice.

Since this recipe uses a cake mix and premade frosting (although you could easily make your own) it is very fast to whip up.  You have plenty of time to make up a batch before the 14th!

Ingredients

  • 1 Box Duncan Hines Pink Velvet cake mix
  • 3/4 C water
  • 1/2 C vegetable oil
  • 3 eggs
  • 1 box vanilla instant pudding mix
  • Duncan Hines Fluffy White Frosting

Instructions

  • Preheat oven to 350.
  • Prepare cookie sheets by lining with parchment paper or lightly greasing.
  • Mix all ingredients except frosting until combined, then beat an additional 2 minutes.
  • Place batter in a gallon freezer bag.
  • Cut a hole in one corner and squeeze batter into small circles on the prepared cookie sheets. Leave 1 inch all the way around for them to spread without touching.
  • Bake 10 to 12 minutes. Cool completely before.
  • Spread frosting on one cake and top with a second to make a sandwich.
  • Roll in sprinkles.
  • Variations
  • This can be changed in many ways by altering the flavor of cake, pudding or icing
