Pumpkin Chocolate Chip Cookies

Nothing signals the beginning of Fall in my kitchen like these delicious Pumpkin Chocolate Chip Cookies!

Canned Pumpkin is never terribly expensive here in the northeast, but as a bonus it tends to go on sale (and have coupons pop up) around Halloween and Thanksgiving. Pick up a can and give this oh so yummy recipe a try.

Pumpkin Chocolate Chip Cookies

2 1/2 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 C Softened Butter
1 1/2 C Sugar
1 C Canned Pumpkin
1 tsp Vanilla
1 Egg
1 C Chocolate Chips

Cream butter and sugar together.

Add pumpkin, vanilla and egg. Beat until the mixture is light and creamy.

Mix all dry ingredients together well in a bowl.

Add dry ingredients to wet and mix well.

Fold or gently mix in chocolate chips.

Drop by the rounded teaspoonful onto a greased cookie sheet and bake at 350 for 15-20 minutes (until lightly browned).

Yes,I have, they are sooooo good.
been munching on carrot cake squares with whipped cream cheese…verrrrrry tasty as well!

I’m goimg to try using speldt flour and leaving out the chips. Let you know how they come out.

Delicious. I don’t like pumpkin pie very much, but I love other pumkiny things and this was great. Micah is wild about them. He’s a complete pumpkin fanatic. During his first cookie, he kept muttering “pumpkin…” “chocolate…” “pumpkin…” :)
