Readers Recipes: Chickpea Spread

This recipe was emailed in to me by my friend Victoria to be included in the Frugal Food Series Part Three: Beans.

Here’s my favorite easy bean recipe, everyone loves it.

Chickpea Spread

1 15oz can Chickpeas, rinsed well
3-4 Tbs Vegenaise (vegan mayo) or regular mayo
2 tsp Fresh Lemon Juice
1 Tbs prepared mustard (regular or spicy, l like Guilden’s)
1 Tbs Nutritional Yeast (can be eliminated)
1/2 tsp Paprika (sweet, hot, or smoked)
1/2 tsp Salt (if the beans are salty eliminate)
Fresh Cracked Black Pepper

Mash all the ingredients to form a chunky spread, or process in food processor. Refrigerate or serve immediately.

Great on toasted Ezekiel bread, crackers, cucumber slices, or as a dip with veggies. Also great as an open faced sandwich topped with cheese and baked at 350 for 10 minutes, or in toaster oven. Feel free to experiment with the amounts of mayo and mustard, my daughter likes lots of mayo ;-)

Not unlike hummus which has a tablespoon or more of tahini (ground sesame seeds) and a few cloves of garlic. Never heard of using mayo.
