Readers Recipes: Menemen-A Turkish Egg Dish

I wanted to contribute to your Egg Dishes Marathon with a Turkish egg dish called Menemen very easy and cheap to make.

Single serving

1 large tomato
2-3 Italian peppers,
1-2 tablespoons of Olive Oil or a little butter if you like
2 eggs
Salt and pepper to taste

You basically sautee the peppers and cubed tomatoes with the oil in a non-stick pan until the peppers are tender. Then you crack the eggs on the sauteed veggies, put a lid on and cook as long as you want your eggs done. They cook real fast so you have to monitor it. Some people like the eggs less cooked and dip toasted bread in the eggs, some like them more cooked. I sometimes mix the eggs with a fork and pour the mixture on top of the veggies. This is a great dish for any meal. I usually have it for dinner if I do not have anything else prepared.

I lived in Istanbul for one year – 1958-59. I loved the food and still prepare many of the dishes I had eaten there. I would love to have a collection of Turkish receipes. I especially liked the dolma, and the preparation of veggies with the ground meat,onion, garlic and tomato base. The breads were the best in the world – I bought them from an old gent off the back of his mule.
