Some days just call for something a little extra special for breakfast. Birthdays, Valentines Day, or even just a snow day can be a reason to celebrate! These easy chocolate waffles are a twist on the classic version-there is no tedious beating of egg whites (never try that by hand-trust me), the chocolate flavor is light and not overbearing, and the additional sugar only adds a few calories.
Try them warm with butter or add a dusting of powdered sugar for a little extra ommph.
1 3/4 C All Purpose Flour
1/3 C Cocoa Powder
1/2 C Sugar
1 TBS Baking Powder
1/4 tsp Salt
1 3/4 C Milk
1/2 C Oil
Mix flour, cocoa, baking powder & salt in a bowl.
Combine milk, oil and eggs in a bowl and beat lightly to combine.
Add egg mixture to dry ingredients all at once and mix until combined. Mixture should still be slightly lumpy.
Pour approx 1 cup of batter onto preheated waffle iron for each waffle.
Makes 5 or 6 full sized waffles.
